- * 3/4 pound ground chuck
- * 3/4 pound ground pork
- * 2 large egg yolks
- * 1/2 teaspoon black pepper
- * 1/4 teaspoon ground allspice
- * 1/4 teaspoon freshly grated nutmeg
- * 1/4 cup all-purpose flour
- * 3 cups beef broth
- * 1/4 cup heavy cream
Farmer's Pasta

Butter a 13 by 9 by 2-inch baking dish
- * Butter, for greasing pan
- * 2 tablespoons (or more) olive oil
- * 6 ounces pancetta, chopped
- * 4 teaspoons minced garlic
- * 1/3 cup all-purpose flour
- * 7 cups whole milk
- * 8 ounces Fontina cheese, grated
- * 4 ounces mozzarella cheese, grated
- * 3/4 cup freshly grated Parmesan
- * 6 ounces provolone cheese, grated
- * 1 pound rigatoni pasta
- * 3 tablespoons chopped fresh Italian parsley leaves
- * 3 tablespoons chopped fresh basil leaves
- * Salt and freshly ground black pepper
- * 2 cups fresh coarse bread crumbs
- * Extra-virgin olive oil, for drizzling
Neely's Wet BBQ Ribs

Combine all of the sauce ingredients in a stockpot or large Dutch oven
- Sauce:
- * 32 ounces ketchup
- * 16 ounces water
- * 6 ounces brown sugar
- * 6 ounces white sugar
- * 1 tablespoon freshly ground black pepper
- * 1 tablespoon onion powder
- * 1 tablespoon dry mustard powder
- * 2 ounces lemon juice
- * 2 ounces Worcestershire sauce
- * 8 ounces apple cider vinegar
- * 2 ounces light corn syrup
- * 3 to 4 pounds spare ribs
- * 2 ounces Neely's Seasoning Mix, recipe follows
- Neely's Seasoning Mix:
- * 4 ounces paprika
- * 2 ounces sugar
- * 1 teaspoon onion powder
- Mix all ingredients together in a bowl.
Loaded Baked Potato Soup

Bring first 7 ingredients to boil in a saucepan over medium-high heat
- 2 cups chicken broth
- 3 medium potatoes, peeled, cubed
- 2 green onions, trimmed and sliced
- 1/2 rib celery, minced
- 1/4 medium carrot, grated
- 2 tsp distilled white vinegar
- 1 tsp salt
- 1 1/2 cups milk mixed with 2 tbsp all-purpose flour
- 1/4 cup shredded cheddar cheese
- 1/4 cup shredded Monterey jack cheese
- 2 - 6 strips cooked bacon, crumbled

- * 3 cups beef stock
- * 1 carrot, chopped
- * 6 sprigs fresh thyme
- * 1 bay leaf
- * 2 pounds chuck roast, cut into 2-inch cubes
- * Kosher salt and freshly ground black pepper
- * 6 tablespoons extra-virgin olive oil
- * 1 medium onion, chopped
- * 2 tablespoons cognac

- * 1 pound mushrooms, sliced

Creamed Spinach

- 2 pounds fresh spinach, washed and tough stems removed
- 2 tablespoons unsalted butter
- 1/2 cup finely chopped shallots
- 1 teaspoon minced garlic
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup heavy cream
