Spicy Italian Sausage and Cheese Bread

Preheat oven to 375 degree F, and sprinkle 1 tablespoon of the cornmeal onto a large baking sheet pan
- Basic Pizza Dough:
- 1 1 1 recipe Basic Pizza Dough, recipe follows, or store bought refrigerated pizza dough from a can or tube
- 2 2 2 tablespoons yellow cornmeal
- 1 1 1 tablespoons olive oil
- 3/4 3/4 3/4 pound mild Italian sausage, remove from the casings
- 1 1 1 cup diced yellow onions
- 1 1 1 teaspoon chopped garlic
- 1/2 1/2 1/2 teaspoons crushed red pepper flakes
- 3 3 3 tablespoons chopped fresh basil leaves
- 2 2 2 tablespoons chopped fresh parsley leaves
- 1 1/2 1 1/2 1/2 cups shredded mozzarella
- 1 1 2 egg plus 2 teaspoons water, beaten together
- 1 1 1 cup warm (110 degrees F) water
- 1 1 1 (1/4-ounce) envelope active dry yeast
- 1 1 1 teaspoon sugar
- 1 1 1 1/2 plus 1 1/2 teaspoons extra-virgin olive oil
- 3 3 3 cups bleached all-purpose flour
- 1 1 1 teaspoon salt
- 1 to 5 bowl, combine the water, yeast, sugar, and 1 tablespoon oil and stir to combine. Let sit until the mixture is foamy, about 5 minutes.
Creamed Spinach

Wash the spinach in several changes of water to get rid of any grit
- 3 pounds spinach
- 2 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic, lightly smashed
- 3/4 cup heavy cream
- 1 teaspoon freshly ground nutmeg
- 1/4 cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper
Thanksgiving Rolls

In a small saucepan, combine the milk, 3 tablespoons butter, and sugar
- 2 cups plus 2 tablespoons milk
- 7 tablespoons unsalted butter, plus more for the baking dish
- 3 tablespoons granulated sugar
- 1 (1/4-ounce) package active dry yeast
- 5 cups unbleached all-purpose flour
- 1 tablespoon fine salt
- Vegetable oil, as needed
Fried Rice with Peas and Carrots

In a pot with a tight fitting lid, add the rice and 4 cups cold water
- Rice:
- 2 cups long-grain white rice, rinsed
- 4 cups cold water
- 1 (1-inch) piece ginger, peeled and sliced in 1/2
- 1 tablespoon kosher salt
- Stir-fry:
- 3 tablespoons sesame oil
- 4 scallions, sliced thin
- 1 (1-inch) piece ginger, peeled and finely chopped
- 2 cloves garlic, chopped
- 1/2 cup frozen peas, run under cool water for 2 minutes to thaw
- 1 carrot, finely chopped
- 2 large eggs, lightly beaten
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon hoisin sauce
- Kosher salt
- Cilantro leaves, for garnish
O'Charley's Loaded Potato Soup

Dice unpeeled red potatoes into 1/2 inch cubes
- 3 lbs red potatoes
- 1/4 cup butter
- 1/4 cup flour
- 8 cups half-and-half
- 1 (16 ounce) package Velveeta cheese, melted
- white pepper
- garlic powder
- 1 teaspoon hot pepper sauce
- 1/2 lb bacon, fried crisp
- 1 cup cheddar cheese, shredded
- 1/2 cup fresh chives, chopped
- 1/2 cup fresh parsley, chopped
Seafood Gumbo

In medium skillet (not cast iron) heat 3 tbsp oil
- 6 tbsp vegetable oil, divided
- 1 lb fresh okra or 1 (16oz) pkg of frozen okra, thawed, thinly sliced (about 4 cups)
- 1 tsp white vinegar
- 1/3 cup all-purpose flour
- 1 c chopped onion
- 1 c chopped green onion
- 1 c chopped green pepper
- 1/2 c chopped celery
- 1 (14.5 oz) can diced tomatoes
- 1/2 c cubed chorizo
- 1 1/2 qt fish stock or water
- 2 bay leaves
- 1 fresh sprig thyme
- 1 tbsp Worcestershire sauce
- 2 tsps Tabasco sauce
- 2 tsp salt
- 1 lb shrimp, shelled and deveined
- 1/2 lb lump crab meat, picked over
- 2 tbsp chopped fresh parsley
- 3 cups cooked rice
- Additional chopped green onion and parsley for garnish
Traditional Apple Pie

Preheat oven to 375 degrees F
- Filling:
- * 2 cups all-purpose flour
- * 1 teaspoon salt
- * 3/4 cup shortening (recommended: Crisco)
- * Ice water
- * Filling, recipe follows
- * Serving suggestion: warm with vanilla ice-cream
- * 1/2 cup to 1 cup all-purpose flour
- * 6 to 7 cups apples cut into thin slices (recommended: Green Golden and Jonathans)
- * 1 cup white sugar
- * 1 cup brown sugar
- * 1 teaspoon cinnamon
- * 2 tablespoons butter
- In a medium bowl combine the apples, with the brown and white sugar. Add flour, cinnamon and continue mixing until they are well coated.
Baked Rigatoni with Bechamel Sauce

Preheat oven to 425 degrees F
- Bechamel sauce:
- * 1 stick unsalted butter (4 ounces)
- * 1/2 cup and 2 tablespoons all-purpose flour
- * 1 quart whole milk, at room temperature
- * Pinch fresh nutmeg
- * Sea salt and white pepper
- * 1 cup grated fontina
- * 1/2 pound thinly sliced prosciutto, julienned
- * 1 pound dry rigatoni
- * 3 tablespoons unsalted butter, diced
Grilled Potato and Green Onion Salad

Prepare a grill to medium-high heat
- Salad:
- 1/2 pound applewood smoked bacon, optional
- 8 russet potatoes
- Gray salt and freshly ground black pepper
- 6 tablespoons extra-virgin olive oil
- 2 bunches green onions, both white and green parts, trimmed
- Dressing:
- 1/3 cup Champagne vinegar
- 1 heaping tablespoon Dijon mustard
- 2 shallots, minced
- 1 teaspoon gray salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup extra-virgin olive oil (or use half bacon fat)
- Bacon fat, optional
- 4 tablespoons chopped Italian parsley leaves
Fudgie Chocolate Brownies

Preheat the oven to 350 degrees F
- * 1 teaspoon plus 1 cup vegetable shortening
- * 2 cups sugar
- * 4 large eggs
- * 1/2 cup water
- * 1 teaspoon pure vanilla extract
- * 1 cup bleached all-purpose flour
- * 3/4 cup unsweetened cocoa powder
- * 1 teaspoon baking powder
- * 1/2 teaspoon salt
- * 1 cup chopped walnuts
- * 4 ounces semisweet chocolate, chopped
- * 1 recipe Chocolate Icing (recipe follows)
- * CHOCOLATE ICING
- * Recipe adapted from Everyday is a Party, by Emeril Lagasse, with Marcelle Bienvenu and Felicia Willett, published by William Morrow, 1999
- * 1 pound confectioners' sugar
- * 1/2 cup unsweetened cocoa powder
- * 1/4 pound (1 stick) unsalted butter, at room temperature
- * 1/3 cup boiling water
- Sift together the confectioners' sugar and cocoa powder into a large mixing bowl. Add the butter and use an electric mixer to combine. Add the water and mix until smooth. Let cool, then use. Yield: about 2 cups
