Linguine with Santa Barbara Spot Prawns

Directions Slice the back of each prawn with a knife to expose the pulp and set aside
- Ingredients
- 1 1/2 pounds fresh Santa Barbara spot prawns, deveined, shells on
- 2 tablespoons olive oil
- 3 cloves garlic, roughly chopped
- Crushed red pepper flakes
- 1 handful fresh parsley, finely chopped
- 1/2 cup dry white wine
- One 28-ounce can whole peeled (pelati) tomatoes, blended
- 1 pound linguine (best choice would be an old traditional bronze-drawn pasta)
- 1 handful fresh basil leaves, torn
- Extra-virgin olive oil, for serving
Lime Yoghurt Cake with Pistachios

Preheat the oven to 350 degrees F
- Ingredients
- 8 ounces self-rising flour
- 1 teaspoon baking powder
- Pinch of salt
- 3 ounces ground almonds
- 3 1/2 ounces caster sugar (superfine)
- 2 medium eggs
- 1 generous tablespoon or 2 ounces honey
- 9 ounces greek plain yoghurt
- 1/2 cup sunflower oil
- Finely grated zest of 1 lime
- For the syrup
- 1/2 cup water
- 3 1/2 ounces caster sugar (superfine)
- Juice of 1 lime
- 1 to 2 tablespoons rosewater
- For decorating
- 2 ounces unsalted pistachios, coarsely chopped, optional
- Serving suggestion: cream, topped with vanilla or lime yoghart , sliced mangoes, or berries

- Pick your shades - each of these combinations produced a different shade of the color. Go ahead and experiment using different liquids, spices, food and ingredient combinations. I would love to hear how they come out so please let me know.
- Purple and Pink
- 1 cup beet juice and 2 teaspoons white vinegar
- 1 cup red wine and 1 tablespoon balsamic vinegar
- 1 cup pomegranate juice and 2 teaspoons white vinegar
- 1/2 cup Concord grape juice and 1/4 cup deeply steeped black cherry herbal tea (use any red-ish tea)
- Green
- 1 cup kale or spinach juice and 2 teaspoons white vinegar
- 1 cup deeply steeped green tea and 2 teaspoons vinegar
- Yellow
- 1 cup water, 2 tablespoons turmeric and 2 teaspoons white vinegar
- GOld
- 1 cup water, 2 tablespoons safron and 2 teaspoons white vinegar
- Brown
- 1 cup strong black coffee with 2 teaspoons white vinegar
- 1 cup Worcestershire sauce with 2 tablespoons soy sauce
- Orange and Rust
- 2 cups water and 2 tablespoons chili powder, 1 tablespoon annatto and 2 teaspoons white vinegar
- Blue
- 2 cups pureed blueberries and 2 cups Concord grape juice
- Red 2 cups canned cherry pie filling (wanted to try fresh cherries but not in season in Jersey) and 2 cups beet juice

Pineapple Upside Down Cake Tricia's

Pineapple Upside Down Cake: Preheat oven to 350 degrees F and place rack in the center of the oven
- Topping:
- 4 tablespoons (1/4 cup) unsalted butter
- 3/4 cup light brown sugar
- 1 medium pineapple peeled, quartered, cored, and sliced 1/4 inch thick)
- Maraschino cherries or candied cherries (optional)
- Note: Can substitute one - 20 ounce (567 gram) can of pineapple slices (drained). Once drained, pat the pineapple slices dry with paper towel and arrange on top of the sugar mixture. Place a maraschino cherry in the center of each pineapple slice.
- Cake Batter:
- 1 1/2 cups all purpose flour

- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated white sugar
