Preheat a medium heavy griddle or cast-iron pan over medium-high heat
- 4 Roma tomatoes, cored
- 1 serrano chile, stemmed
- 1 small shallot, peeled
- 2 1/2 tablespoons chicken broth (homemade or canned low-sodium)
- 1 small handful fresh cilantro sprigs
- Kosher salt and freshly ground black pepper
Lemon Parmesan Dressing

Place the olive oil, Parmesan, salt, pepper to taste, sugar, paprika, lemon juice and garlic into a jar
- 3/4 cup olive oil or vegetable oil
- 4 tablespoons grated Parmesan, more to taste
- 1/4 teaspoon salt (or more to taste)
- Freshly ground black pepper
- 1/4 teaspoon sugar
- Dash or 2 of paprika
- Juice of 2 lemons
- 1 garlic clove, peeled and left whole

- 2 cups chopped yellow onions (2 onions)
- 2 cups chopped celery (4 stalks)
- 2 cups chopped leeks, white and light green parts (2 to 4 leeks)
- 5 large garlic cloves, peeled and crushed
- 2 cups good red wine, such as Burgundy
- 2 tablespoons Cognac or brandy
- 1 (28-ounce) can whole plum tomatoes in puree
- 1 cup chicken stock, preferably homemade
- 1 chicken bouillon cube
- 3 branches fresh thyme
- 2 branches fresh rosemary
- 1 tablespoon unsalted butter, at room temperature
