Shredded Mexican Pork

Preheat oven to 225 degrees or turn on crockpot to medium
- 2 cloves garlic, minced
- 1/2 large onion, chopped
- 2 tablespoons olive oil
- 1-1 1/2 lb. pork roast
- salt & pepper, to taste
- 1 1/4 cups good quality green enchilada sauce

In a large bowl combine cooked pasta and sesame oil, tossing well to coat
- 8 ounces hot cooked pasta noodles (spaghetti, linguini, ect)
- 1 lb flank steak (sliced)
- 1 teaspoon dark sesame oil
- 1 tablespoon peanut oil
- 1 tablespoon fresh ginger (minced)
- 4 garlic cloves (minced)
- 3 cups fresh broccoli (chopped)
- 1 1/2 cups onions (sliced)
- 3 tablespoons low sodium soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon oyster sauce
- 1 tablespoon chile paste with garlic

Cheesecake Bites {or Squares}

Preheat oven to 325 degrees
- For the graham cracker crust:
- 2 heaping cups cracker crumbs ~ about 1 1/2 packages
- 3 Tbsp sugar
- 1/2 tsp cinnamon (optional)
- 1 1/2 sticks butter, melted
- For the cheesecake filling:
- 3 8-ounce packages cream cheese, softened to room temperature
- 1 cup sugar
- 3 Tbsp flour
- 2 tsp vanilla
- 3 eggs, slightly beaten
- 16 ounces sour cream
White Crispies

Melt white chocolate chips and add peanut butter
- 2 bags (4 cups) white chocolate chips
- 1 cup peanut butter
- 3 cups Rice Krispies Cereal
- 2 cups miniature marshmallows

- 1 1/2 lbs large shrimp (peeled and deveined with tail on)
- 2 tablespoons butter (melted)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice
- 2 garlic cloves (minced)
- 3/4 teaspoon old bay seasoning
- 3/4 teaspoon Cajun seasoning
- 3/4 teaspoon hot pepper sauce
- 1/4 teaspoon ground black pepper
CAFE RIO CHICKEN

Place all ingredients in a crock pot
- 2 lbs chicken breasts
- 1/2 a small bottle of zesty Italian dressing
- 1/2 Tbsp. minced garlic
- 1 pkt ranch dressing mix (mixed with 1/2 cup of water)
- 1/2 Tbsp. chili powder
- 1/2 Tbsp. ground cumin

- for the chicken-
- 4 chicken thighs, skin and extra fat removed & rinsed
- 1/2 cup all purpose flour + salt & pepper, to taste
- 1 egg
- 2 tablespoons milk
- 3 dashes hot sauce + salt & pepper to taste
- 3/4 cup panko bread crumbs
- 1 1/2 teaspoons cajun seasoning
- 1/2 teaspoon paprika
- salt & pepper, to taste
- 1 1/2 tablespoons peanut oil
- for the coleslaw-
- 1/2 head green cabbage, shredded
- 1/2 onion, finely diced
- 1 large carrot, grated
- 2 tablespoons chopped chives {optional}
- 1 cup mayonnaise
- 1/4 cup white vinegar
- 3 tablespoons sugar
- salt & pepper, to taste
