Bruschetta Chicken

I got this recipe from a local cable TV cooking show
- 1/2 cup flour
- 2 eggs, slightly beaten
- 4 boneless skinless chicken breasts
- 1/4 cup grated parmesan cheese
- 1/4 cup dry breadcrumbs
- 1 tablespoon butter or 1 tablespoon margarine, melted
- 1 tablespoon margarine, melted
- 2 large tomatoes, chopped & seeded
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 3 tablespoons minced fresh basil, set aside a few whole leaves as garnish (coriander or cilantro can also be used for a different taste)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper

Heat oven to 350 degrees. Grease 13 x 9 baking pan
- 2 cans crescent rolls
- 2 8 oz packages cream cheese
- 1 cup sugar
- 1 teaspoon vanilla
- 1/2 stick melted butter
- 1/2 cup sugar mixed with cinnamon for topping

1. Preheat oven to 350°. Stir together first 3 ingredients in a small bowl until well blended
- 1 1/2 cups finely crushed vanilla wafers
- 1/2 cup chopped pecans
- 1/4 cup butter, melted
- 17 vanilla wafers
- 2 large ripe bananas, diced
- 1 tablespoon lemon juice
- 2 tablespoons light brown sugar
- 3 (8-oz.) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup coarsely crushed vanilla wafers
- Garnishes: sweetened whipped cream, vanilla wafers, sliced bananas tossed in lemon juice

This is an easy to make tasty dish that I clipped from my local newspaper
- 1 (14 ounce) can chicken broth
- 2 (4 ounce) cans chopped green chilies, drained
- 1 cup chopped onion
- 1 cup light sour cream
- 1/2 teaspoon salt
- 3/4 teaspoon cumin
- 1/2 teaspoon fresh ground black pepper
- 2 (10 1/2 ounce) cans condensed cream of chicken soup
- 1 garlic clove, minced
- 20 (6 inch) corn tortillas
- 4 cups shredded cooked chicken breasts (about 1 pound)
- 2 cups finely shredded low-fat cheddar cheese

I do not remember where I got this recipe, but my husband says it tastes just as good as what he had at Denny's
- 4 eggs
- 2/3 cup whole milk
- 1/3 cup flour
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 6 slices Texas toast thick bread

In a large skillet, melt the butter and olive oil together over medium-high heat
- 1 tablespoon butter
- 1 tablespoon extra-virgin olive oil
- 1 cup sliced baby portobello mushrooms
- 1/2 cup thinly sliced leeks
- 1 clove garlic, minced
- 1/4 cup vegetable broth
- 1 tablespoon heavy whipping cream
- 1 teaspoon fresh lemon juice
- 1/8 teaspoon salt
- 2 cups fresh baby spinach

Oven Barbecue Baked Chicken Thighs

Notes from our test kitchen; using frozen thawed chicken will combine with the sauce causing it to become water, it
- 2 pounds chicken thighs
- fresh ground black pepper
- oil as needed for browning the chicken
- 1 large onion, chopped or sliced
- 1 green bell pepper, seeded chopped, optional
- 1/4 cup prepared yellow mustard (can increase to 1/3 cup)
- 1/4 cup ketchup
- 1/3 cup cider vinegar
- 1 tablespoon liquid smoke seasoning (do not omit!)
- 1/3 cup brown sugar
- 1 tablespoon mild chili powder
- 3 garlic cloves, minced
- pinch cayenne pepper
- 1/2 teaspoon fresh ground black pepper, or to taste
- 1 teaspoon seasoned salt, or to taste

These are great for an appetizer or double the recipe and serve with a salad for dinner

- 2 teaspoons dried parsley
- 1/4 teaspoon garlic powder
- 1 (8 ounce) can biscuits (10 biscuits)
- 2 cups mozzarella cheese (can use less)
- 2 tablespoons parmesan cheese, grated

"Old Reliable" French Bread (for Kitchen Aid Mixers)

This recipe came with my Kitchen Aid mixer, and makes two absolutely beautiful loaves of French Bread
- 2 packages active dry yeast
- 2 1/2 cups water (105F to 115 F)
- 1 tablespoon salt
- 1 tablespoon melted margarine or 1 tablespoon butter
- 7 cups all-purpose flour
- 2 tablespoons cornmeal
- 1 egg white
- 1 tablespoon cold water
