Slow Cooker Chicken Noodle Soup

You will need a 6-quart slow cooker for this recipe
- 6 bone-in, skin-on chicken thighs (about 3 pounds)
- Salt and pepper
- 1 tablespoon unsalted butter
- 6 carrots, peeled and sliced into 1/2-inch rounds
- 4 celery ribs, sliced
- 2 onions, chopped
- 4 garlic cloves, minced
- 1 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 12 cups low-sodium chicken broth
- 2 bay leaves
- 4 bone-in, skin-on split chicken breasts (about 3 pounds)
- 2 cups cooked egg noodle
- 1 cup frozen peas, thawed
- 2 tablespoons minced fresh parsley
Farmer's Chicken Soup

Heat the oil in a soup pot and saute the onion for 2 minutes on medium high heat
- 2 Tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp ground black pepper
- 4 cups chicken broth
- 1 large onion, chopped
- 2 boneless, skinless chicken breasts, cut into 1 inch cubes

- 2 cups water
- 4 cups milk
- 1/2 cup sweetened condensed milk

- 1 cinnamon stick about 2” long

- 1 vanilla bean, split lengthwise, seeds scraped out (or 2 teaspoons vanilla extract)

- 3/4 cup sugar
- 2 tablespoons light corn syrup
- 2/3 cup sugar
- 3/4 cup heavy cream
- 2 tablespoons whiskey

Potato, Scallion and Chorizo Tacos

- 1 lb red bliss potatoes, peeled and cut into 1-inch pieces
- 8 oz fresh uncooked Mexican chorizo sausage, casings removed, coarsely chopped
- 8 scallions white and light green parts, thinly sliced (1/2 cup)
- 1 tsp kosher or sea salt or more to taste
- 10-12 corn tortillas
