Charred Tomato Oil

1. Preheat the broiler to high
- 2 cups cherry tomatoes
- 30 garlic cloves
- 1 red bell pepper
- 4 cups olive oil
- 1 tablespoon oregano, chopped
- 4 oil-cured anchovies, minced
- 1 fresh bay leaf
- Pinch crushed red pepper flakes
- Kosher salt, to taste
Smoked Cheddar Polenta

Position an oven rack in the center of the oven, and preheat the oven to 350°F
- 1 large ear corn, shucked and snapped in half
- 1 cup whole milk
- 1 cup water
- 1/2 cup polenta (not quick cooking)
- 1 oz. extra sharp white cheddar, coarsely grated (1/4 cup)
- 1 oz. smoked cheddar, coarsely grated (1/4 cup)
- 1 Tbs. unsalted butter
- Kosher salt and freshly ground black pepper
- Chicken broth, as needed (optional)
Roasted Potato Salad with Sour Cream and Shallots

Preheat the oven to 400°
- 2 lb. Yukon Gold potatoes, scrubbed and cut into 3/4-inch chunks
- 3 tbsp. olive oil, divided
- 1 1⁄2 tsp. kosher salt, divided
- Freshly ground pepper
- 2 medium shallots, thinly sliced (about 1/4 cup)
- 2 cloves garlic, roughly chopped
- 1 ⁄3 cup sour cream
- 1 tsp. Dijon mustard
- 1 tsp. red wine vinegar
- 2 tbsp. chopped fresh flat-leaf parsley

- 3 tablespoons unsalted butter, softened
- 1 1/2 ounces blue cheese (mild), room temperature
- 1/8 teaspoon table salt
- 2 tablespoons minced fresh chive
Buttermilk Biscuits

1. Preheat the oven to 425° F
- Makes 12 to 15 biscuits (depending on cut size)
- 5 cups (22 ounces) all-purpose flour (White Lily flour is best, if you can get it)
- 1 teaspoon (3 1/2 grams) kosher salt
- 1 tablespoon (15 grams) baking powder
- 1 1/2 sticks (6 ounces) unsalted butter, cold and cubed
- 2 cups (16 fluid ounces) buttermilk
Best Old Fashioned Burgers

- Classic Burger Sauce:
- 10 ounces sirloin steak tips, cut into 1-inch chunks (see note)
- 6 ounces beef short ribs (boneless), cut into 1-inch chunks
