Herb Mashed Sweet Potatoes

This recipe can be doubled and prepared in a Dutch oven, but the cooking time will need to be doubled as well
- 5 tablespoons unsalted butter, cut into 5 pieces
- 3 tablespoons heavy cream
- 1 1/4 teaspoons sugar
- 2 pounds sweet potatoes (2 large or 3 medium), peeled, quartered lengthwise, and cut into 1/4-inch-thick slices
- 1 sprig fresh thyme (see note)
- 1 small onion, chopped
- 1 tablespoon sour cream
Potato Chip Cookies

Position oven racks in the middle and top of the oven and heat the oven to 350°F
- Tip:
- 8 oz. (1 cup) unsalted butter, softened at room temperature; more for shaping
- 1/2 cup granulated sugar; more for shaping
- 1 tsp. pure vanilla extract
- 8 oz. (scant 2 cups) all-purpose flour
- 2 oz. (1/2 cup) finely chopped pecans
- 1/2 cup finely crushed potato chips
- For the best results, measure your flour by weight instead of volume. (1 cup of all-purpose flour equals 4-1/2 oz.) If you don’t have a scale, be sure to use the proper technique when filling your measuring cups.
