Eggs Benedict with Foolproof Hollandaise

If you like, you can toast the English muffins and warm the bacon 20 minutes in advance
- Sauce:
- 2 tablespoons white vinegar
- 1 teaspoon salt
- 8 large eggs
- 4 English muffins, split
- 8 slices Canadian bacon
- 1 recipe Foolproof Hollandaise (recipe follows)
- 12 tablespoons (1 1/2 sticks) unsalted butter, softened
- 6 large egg yolks
- 1/2 cup boiling water
- 2 teaspoons lemon juice
- 1/8 teaspoon cayenne pepper

Patty Melts

To make sure the melts hold together, use rye bread that's sliced about 1/2 inch thick
- 10 slices hearty rye bread
- 2 tablespoons whole milk
- 3/4 teaspoon onion powder
- 1 1/4 teaspoons salt
- 1/2 teaspoon pepper
- 1 1/2 pounds 85 percent lean ground beef
- 3 tablespoons unsalted butter
- 2 onions, halved and sliced thin

Monte Cristo Crepes

Simple Award Winning Chili

This recipe was conceived in the grocery store aisle many years ago and was a staple in our family for years
- For Garnish:
- 1 lb extra lean ground beef
- 1 lb roll of pork breakfast sausage
- 1 onion, chopped (optional)
- 2 packages of Brooks Chili Seasoning
- 1 28 oz can of tomato sauce or diced tomatoes in juice, your choice
- 1 30.5 oz can of Brooks Chili Hot Beans (must be the hot ones, the mild will be too bland)
- If your family likes spicier chili, then buy the 40 oz size can of chili hot beans.
- We like diced onion, shredded sharp cheddar cheese, and saltines.
Slow Cooker Mexican Pork and Tomatillo Stew

Season the pork with salt and pepper
- 3 1/2 pounds trimmed pork shoulder, cut into 1-inch pieces
- Kosher salt and freshly ground pepper
- 1 tablespoon canola oil
- 1/2 cup low-sodium chicken broth
- 1 pound tomatillos—husked, rinsed and cut into 1-inch pieces
- 1 onion, cut into 1/2-inch dice
- 2 garlic cloves, thinly sliced
- 1 jalapeño, thinly sliced
- One 15-ounce can hominy, drained and rinsed
- 3 tablespoons coarsely chopped cilantro
Double Decker Dr. Pepper Chicken Tacos

- 1 stick unsalted butter, softened

- One 4-pound chicken
- 3 poblano peppers, sliced lengthwise 1/2 inch thick

- 9 9 9 graham cracker squares (1 cup crumbs)
- 1/2 1/2 1/2 cup butter, melted
- 1/2 1/2 1/2 cup brown sugar
- 2 2 2 cups miniature marshmallows
- 1 1/2 1 1/2 1/2 cups chocolate chips
French Onion Salisbury Steak over Cheese Toasts

Combine ground chuck, 1/4 cup parsley, scallions, salt, and pepper
- For Steaks:
- 1 1/4 lb ground chuck
- 1/4 cup minced fresh parsley
- 2 Tbsp minced scallions
- 1 tsp kosher salt
- 1/2 tsp pepper
- 2 Tbsp all purpose flour
- For the Sauce:
- 1 Tbsp olive oil
- 2 cups sliced onions
- 1 tsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp tomato paste
- 2 cups low sodium beef broth
- 1/4 cup dry red wine
- 3/4 tsp kosher salt
- 1/2 tsp dried thyme
- For Cheese Toasts:
- 4 slices Italian baguette cut diagonally 1/2" thick
- 2 Tbsp unsalted butter, room temp
- 1/2 tsp minced garlic
- Pinch of paprika
- 1/4 cup shredded swiss cheese
- 1 Tbsp shredded parmesan
- Minced fresh parsley & shredded parmesan for garnish
Grilled Gruyère and Sweet Onion Sandwiches

In a deep skillet, melt 1 tablespoon of the butter in the oil
- 3 tablespoons unsalted butter, softened
- 1 tablespoon extra-virgin olive oil
- 1 large onion, halved and thinly sliced crosswise (4 cups)
- Salt and freshly ground pepper
- Eight 1/2-inch-thick slices of whole-grain bread
- Dijon mustard
- 8 ounces imported Gruyère cheese, thinly sliced
- 2 half-sour pickles, thinly sliced lengthwise
