SMOKEY CHEDDAR MINI BURGERS

Preheat grill or grill pan to medium-high
- 4 slices of Applewood smoked bacon
- 1 lb. ground beef
- 1 c. cheddar cheese, shredded
- 2 tbsp. dried onion flakes
- 2 tsp. sweet smoked paprika
- 1 clove of garlic, minced
- 8 slider buns
Spicy Beef and Noodles

If your market carries fresh Chinese egg noodles, use two 9-ounce packages in place of the ramen noodles
- 1 pound boneless shell sirloin steak
- Salt and pepper
- 1 teaspoon vegetable oil plus 2 additional tablespoons
- 4 cinnamon sticks
- 4 whole cloves
- 4 cloves garlic, sliced thin
- 1 1/2 inch piece fresh ginger, peeled and cut into thin strips
- 2 cups low-sodium chicken broth
- 1 teaspoon red pepper flakes
- 2 tablespoons soy sauce
- 4 packages instant ramen noodles (seasoning packets discarded)
- 1 1/2 pounds fresh spinach, stem ends trimmed
Mexican Spice-Rubbed Rib Eyes with Lime Butter

- 4 tablespoons unsalted butter, softened
- 1 small garlic clove, minced
- 1/4 teaspoon finely grated lime zest

Maple Roasted Carrot Salad

Preheat the oven to 425 degrees
- 2 pounds carrots, preferably with leafy tops
- Good olive oil
- Kosher salt and freshly ground black pepper
- 1/4 cup pure Grade A maple syrup
- 2/3 cup dried cranberries
- 2/3 cup freshly squeezed orange juice (2 oranges)
- 3 tablespoons sherry wine vinegar
- 2 garlic cloves, grated on a Microplane
- 6 ounces baby arugula
- 6 ounces goat cheese, such as Montrachet, medium-diced
- 2/3 cup roasted, salted Marcona almonds
Lamb Stew with Spring Vegetables

Preheat the oven to 350 degrees F
- 2 tablespoons canola oil
- 1/4 pound applewood smoked bacon, 3/4-inch-diced
- 3 pounds boneless lamb shoulder, 1 1/2-inch-diced
- Kosher salt and freshly ground black pepper
- 1/4 cup plus 2 tablespoons all-purpose flour
- 2 tablespoons minced garlic (6 cloves)
- 2 cups canned beef stock, such as College Inn
- 1 cup full-bodied red wine, such as Cotes du Rhone, plus extra for serving
- 1 cup diced canned tomatoes, preferably San Marzano
- 2 teaspoons minced fresh thyme leaves
- 2 teaspoons minced fresh rosemary leaves
- 1 pound carrots, peeled and cut 2 inches thick diagonally
- 12 ounces small Yukon Gold potatoes, 1 1/2-inch-diced
- 8 to 10 ounces fresh cipolline or pearl onions, peeled (see note)
- 6 small turnips, whole or halved, depending on size (1 pound)
- 2 tablespoons unsalted butter, at room temperature
- 1 (10-ounce) package frozen green peas, such as Birds Eye Garden Peas

- 250 gram Philidelphia Brick Cream Cheese, room temperature
- 1 tsp pure peppermint extract
- 3 dashes food colouring of choice
- 5 cups powdered sugar

- Serves 4
- One 15-ounce bag frozen hash browns
- 2 teaspoons smoked paprika (or 1 1/2 teaspoon paprika plus 1/2 teaspoon chili powder)
- 1 1/2 teaspoons coarse kosher salt
- 1 teaspoon freshly ground black pepper
- 4 scallions, white and green parts, thinly sliced
- 1/4 cup olive oil
- 1 large egg, lightly beaten
- 2 tablespoons unsalted butter
