- HEAT:

- 4 cups whole milk
- 1/4 cup hot espresso or very strong coffee

Cheese Blintzes with Raspberry Sauce

- FILLING:
- 11 ounces (1 1/4 cups plus 2 tablespoons) whole-milk ricotta cheese
- 1/2 cup (2 ounces) confectioners' sugar
- 1 ounce cream cheese, softened
- 1/4 teaspoon salt
- SAUCE:
- 10 ounces (2 cups) frozen raspberries
- 1/4 cup (1 3/4 ounces) granulated sugar
- 1/4 teaspoon salt
- CRÊPES:
- 2 cups (10 ounces) all-purpose flour

Turkey Burgers with Spicy Pepper Relish

- FOR THE RELISH, HEAT:
- 2 Tbsp. olive oil
- 3/4 cup diced red onion
- 1 Tbsp. minced fresh garlic
- 1 1/2 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 1 1/2 cups chopped jarred roasted red peppers
- 3 Tbsp. cider vinegar
- 1 Tbsp. sugar
- Salt to taste
- FOR THE BURGERS, MIX:
- 1 lb. ground turkey
- 2 Tbsp. chopped fresh parsley
- 2 tsp. minced fresh garlic
- 1 tsp. each kosher salt and black pepper
- MASH:
- 2 avocados
- 1 Tbsp. canola oil mayonnaise
- 1 Tbsp. fresh lemon juice
- ASSEMBLE:
- 4 hamburger buns, toasted

Garlic Bread "Fries" with Marinara "Ketchup"

- 4 tablespoons unsalted butter
- 1/2 cup extra-virgin olive oil
- 3 large garlic cloves, minced
- 1/2 cup finely chopped flat-leaf parsley
- 1 large baguette, split and halved

Chunky Sweet Spiced Apple Butter

Combine apples, sugar, vinegar, 2 Tbsp butter, cinnamon, salt and cloves in slow cooker
- 4 cups (about 1 1/4 lbs) peeled, chopped Granny Smith apples
- 3/4 cup packed dark brown sugar
- 2 Tbsp balsamic vinegar
- 1/4 cup butter, divided
- 1 Tbsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp ground cloves
- 1 1/2 tsp vanilla
Basic Shakshuka

Heat oil over medium heat in a large skillet, add onion and green pepper and saute until softened

- 2 Tbsp Olive oil

- 2 Tbsp tomato paste
- 1 tsp chili powder
