Five Easy Seasoned Salts

Salts will keep for 6 weeks in an airtight container
- All Purpose:
- 1/4 cup kosher salt
- 1 tablespoon pepper
- 1 teaspoon granulated garlic
- 1 teaspoon onion flakes
- 1/4 teaspoon red pepper flakes
- Smoked Salt:
- 1/4 cup kosher salt
- 1 tablespoon pepper
- 1 tablespoon hot smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon granulated garlic
- 1 teaspoon onion flakes
- 1/4 teaspoon red pepper flakes
- Montreal Salt:
- 1/4 cup kosher salt
- 1 tablespoon pepper
- 2 teaspoons dried rosemary
- 1 teaspoon granulated garlic
- 1 teaspoon onion flakes
- 1 teaspoon ground coriander
- 1 teaspoon caraway seeds
- 1/4 teaspoon red pepper flakes
- Greek Salt:
- 1/4 cup kosher salt
- 1 tablespoon pepper
- 1 teaspoon granulated garlic
- 1 teaspoon onion flakes
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- Caribbean Salt:
- 5 bay leaves
- 1 teaspoon whole cloves
- 1/4 cup kosher salt
- 1 tablespoon pepper
- 1 teaspoon granulated garlic
- 1 teaspoon onion flakes
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon red pepper flakes
Smoky Quinoa and Bacon Salad

Combine the quinoa, water and salt in a medium saucepan
- 1 cup uncooked quinoa
- 2 cups water
- Pinch of kosher or sea salt
- 8 pieces of bacon
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon spicy brown mustard
- 1 teaspoon brown sugar
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground chipotle
- 1/4 teaspoon kosher or sea salt
- Fresh cracked black pepper, to taste
- 1/4 medium red onion, thinly sliced
- 1/4 cup chopped Italian parsley
Parmesan Roasted Potatoes

Preheat oven to 375 with a baking sheet inside
- 1 1/2 lbs small red skinned potatoes, cut into 1/2 inch thick slices
- 3 Tbsp olive oil
- 1/2 cup parmesan cheese
- 1/4 cup each dry bread crumbs and minced fresh parsley
Chimichurri Chickpeas

To make the chimichurri, combine all the ingredients except the olive oil in a food processor
- For the chimichurri:
- 1 cup packed flat-leaf parsley
- 1/2 cup packed mint
- 1/2 cup packed cilantro
- 1 serrano or other hot green chile
- pinches red pepper flakes, optional
- 1 garlic clove, peeled
- 1 tablespoon lime juice
- 1 tablespoon sherry or white wine vinegar
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 cup olive oil
- For the salad:
- Two 15-ounce cans chickpeas, drained and rinsed
- 1 pint grape or cherry tomatoes, halved
- 1/4 pound feta cheese, crumbled or cubed
- 1/4 cup chopped toasted almonds
- Salt and freshly ground pepper, to taste

- For the crust:
- 1 stick (4 oz.) unsalted butter, softened
- 1 ⁄4 cup plus 2 Tbsp. sugar
- 2 large egg yolks
- 1 1⁄4 cups unbleached all-purpose flour
- 2 tbsp. unsweetened cocoa powder
- 1 ⁄4 tsp. kosher salt
- Semisweet chocolate ganache filling, for filling
- For the topping:
- Flaky sea salt
- 2 tbsp. dark-roasted espresso or coffee beans, finely chopped or crushed
- Unsweetened whipped cream, for serving (optional)

- 1 cup heavy cream
- 10 oz. semisweet or bittersweet chocolate (use a bar, not chips), chopped
