Yogurt Mashed Potatoes for 2

Boil potatoes in a pot of salted water until tender, 10–12 minutes
- BOIL:
- Makes 2 servings
- Total time: 20 minutes
- 3/4 lb. russet potatoes, peeled and cubed
- STIR IN:
- 1/3 cup plain Greek yogurt
- 1 Tbsp. extra-virgin olive oil
- 1 Tbsp. minced scallions
- 1 tsp. minced lemon zest
- Salt to taste
Greek Style Cheese Pies (Tyropita)

Preheat oven to 375 ºF
- 1 cup feta cheese, crumbled
- 1 cup fresh ricotta
- 1 teaspoon dried dill (or 1 tablespoon fresh dill)
- 1 teaspoon dried mint
- 1/2 teaspoon white pepper
- 1 egg
- 12 sheets good quality phyllo dough, thawed
- 1 stick of butter melted (Clarified is best)
Swedish Cured Pork Loin

Pork Chops in Port Wine Sauce

Bring the shallots, Port, and sugar to boil in a medium saucepan; boil until the mixture is reduced a scant 1/4 cup
- 1 medium shallot, finely chopped (about 1/3 cup)
- 1/2 cup Port wine
- 1 teaspoon sugar
- 1/3 cup low-sodium chicken broth
- 1/4 cup plum preserves, strained
- 1/2 teaspoon salt, divided
- 1/4 teaspoon pepper, divided
- 1/2 teaspoon ground coriander
- 1/4 teaspoon garlic powder
- 4 bone-in center-cut pork chops (about 1 3/4 pounds)
- 1 tablespoon olive oil
Mexican Chicken and Rice

Combine chili powder, cumin, coriander, salt, and black pepper in a large bowl
- COMBINE:
- 1 Tbsp. each chili powder and ground cumin
- 1 tsp. each ground coriander and kosher salt

- 1 1/2 lb. boneless, skinless chicken thighs, cubed
- HEAT:
- 3 Tbsp. olive oil, divided
- 1/2 cup each diced white onion and yellow bell pepper

- 1 1/2 cups dry basmati rice

How to Smoke Cheese

This recipe by Jeff Phillips The temperature needs to be no more than 90*F to prevent melting
- Sharp cheddar, parmesan, mozzarella, gouda, muenster and edam are good cheeses to use. Prep cheese by cutting into pieces 1 inch thick by 3-4 inches wide.
- Approximately 1 cup apple wood chips, soaked
- 2-3 pieces of charcoal

Eggs Benedict Breakfast Bread Pudding

Preheat oven to 350°. Coat a 9×13-inch baking dish with nonstick spray
- BRUSH:
- 6 Tbsp. unsalted butter, melted
- 2 pkg. presplit English muffins (12 muffins total)

- 2 cups diced onions
- 2 Tbsp. minced fresh garlic

- WHISK:
- 4 cups half-and-half
- 10 eggs

- 3 Tbsp. Dijon mustard

- ADD:
- 12 oz. cooked ham, torn into

Honey Roasted Baby Back Ribs

- 2 (2 1/2 to 3 lb) racks baby back ribs, trimmed, membranes removed, each rack cut into 3 equal pieces
