Roasted Sweet Potatoes with Thai Chili Dipping Sauce

Ingredients
- Thai Chili Dipping Sauce:
- 2 sweet potatoes cut into thick wedges
- 1-2 Tbsp olive oil
- 1/2 tsp ground mustard
- 1 1/2 tsp curry powder
- 1/4 tsp cayenne powder
- Salt and pepper to taste
- 1/4 cup teriyaki sauce
- 1/4 cup sweet chili sauce

Step 1
Preheat oven to 425. Toss sweet potatoes with oil, spices and salt and pepper in a bowl before placing on the pan to reduce sticking. Spread the sweet potatoes in a single layer on a baking sheet.
Bake for 20 minutes, then flip the wedges so they can cook on all sides. Bake for an additional 15 to 20 minutes or until the potatoes are crispy.
Meanwhile, mix the teriyaki sauce and sweet chili sauce together. Serve sweet potato wedges with the dipping sauce.
