Two-Chile Harissa

In a large saucepan, cover the chiles with water and bring to a boil
- 3 ounces dried guajillo chiles (about 15)
- 1 1/2 ounces dried ají amarillo chiles (about 5)
- 3 tablespoons caraway seeds
- 2 tablespoons cumin seeds
- 1 tablespoon coriander seeds
- 1 1/2 teaspoons fennel seeds
- 3 garlic cloves
- 1 teaspoon dried organic rose petals (see Note)
- 1/3 cup fresh lime juice
- 1/2 teaspoon rose water
- Extra-virgin olive oil
- Kosher salt
Beef Tacos

Tomato sauce is sold in cans in the same aisle that carries canned whole tomatoes
- Beef Filling:
- 2 teaspoons vegetable oil or corn oil
- 1 small onion, chopped small (about 2/3 cup)
- 3 medium cloves garlic, minced or pressed through garlic press (about 1 tablespoon)
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- Salt
- 1 pound 90% lean ground beef (or leaner)
- 1/2 cup tomato sauce
- 1/2 cuplow-sodium chicken broth
- 1 teaspoon brown sugar
- 2 teaspoons vinegar (preferably cider vinegar)
- Ground black pepper
- Shells and Toppings:
- 8 taco shells (warmed according to package instructions), or Home-Fried Taco Shells (see related recipe)
- 1 cupshredded cheddar cheese (4 ounces), or Monterey Jack cheese
- 2 cups shredded iceberg lettuce
- 2 small tomatoes, chopped small
- 1/2 cup sour cream
- 1 avocado, diced medium
- 1 small onion, chopped small
- 2 tablespoons minced fresh cilantro leaves
- Tabasco sauce, or another brand of hot sauce
Prosciutto-Wrapped Dates with Goat Cheese and Walnuts

Make the dates up to a day ahead
- 1/2 cup goat cheese (4 oz.), softened
- 1/4 cup finely chopped walnuts, toasted
- 1 Tbsp. each chopped fresh parsley and lemon zest
- 1 tsp. minced shallots
- Salt and black pepper to taste
- 20 medjool dates, pitted
- 10 slices prosciutto (5 oz.), halved lengthwise
Whipped Feta Dip

Tip: Don’t use pre-crumbled feta; it can be dry and chalky
- 8 OUNCES FETA CHEESE
- 2 TABLESPOONS LEMON JUICE
- 1 GARLIC CLOVE, PEELED AND SMASHED
- 3 OUNCES CREAM CHEESE, ROOM TEMPERATURE
- 1/3 CUP EXTRA-VIRGIN OLIVE OIL
- 1/2 TEASPOON SMOKED PAPRIKA
- 1/2 TEASPOON RED PEPPER FLAKES
- 1/4 TEASPOON GROUND BLACK PEPPER
- 2 TABLESPOONS CHOPPED FRESH MINT
- 2 TABLESPOONS CHOPPED MILD PEPPADEW PEPPERS
Chicken and Chorizo Paella

FOR THE VEGETABLES: In a large frying pan, heat 1-1/2 tablespoons of oil over moderately low heat
- For the vegetables:
- 1 1/2 tablespoons olive oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 1/4 teaspoons salt
- For the meat:
- 3 Chorizo Sausage Links
- 1/4 teaspoon dried red pepper flakes
- 1 teaspoon smoked paprika
- 1 pound boneless, skinless chicken breasts (about 3), cut into 1/2-inch cubes
- 1/4 teaspoon fresh-ground black pepper
- 1/4 cup white wine
- 1/2 can low sodium chicken broth
- 1 cup frozen peas
- For Pasta:
- 1/2 pound orzo (about 1 cup)
- 1/2 cup chopped fresh parsley for garnish
