Pepper Vinegar

Pepper vinegar is spicy. For a milder vinegar, remove the seeds and ribs from the chiles
- 6 ounces tabasco, red Fresno, or red jalapeño chiles, halved lengthwise
- 3 cups distilled white vinegar
- 4 teaspoons sugar
- 2 teaspoons salt
- 1 teaspoon black peppercorns
- 1/4 teaspoon red pepper flakes
Roast Beef Carpaccio with Gorgonzola Potato Salad

Put the potatoes in a medium pot of cold salted water
- 1 pound fingerling potatoes, halved lengthwise
- Kosher salt
- 1 cup crumbled gorgonzola dolce cheese (4 ounces)
- 3 tablespoons grated parmesan cheese
- 2 tablespoons 2% Greek yogurt
- 1 clove garlic
- Freshly ground pepper
- 1 9 -ounce package Italian salad blend (8 cups)
- 1/4 cup jarred Peppadew peppers, drained and roughly chopped
- 2 tablespoons roughly chopped fresh parsley
- 12 ounces deli-sliced rare roast beef
Joe Booker Stew (Beef Stew with Dumplings)

- STEW:
- 8 ounces salt pork, quartered
- 3 pound boneless beef chuck, cut into 1-inch chunks

- 2 onions, chopped
- 2 tablespoons all-purpose flour
- 4 cups low-sodium beef broth
- 4 cups water
- 2 teaspoons minced fresh thyme

- 1 lb. boneless, skinless chicken breasts, cubed
- 3 tbsp. shaoxing (Chinese rice wine)
- 2 tbsp. sugar
- 3 tbsp. chicken stock
- 4 tsp. Chinkiang vinegar or balsamic vinegar
- 1 tbsp. Asian sesame oil
- 2 tsp. Chinese dark soy sauce
- 3 tbsp. peanut oil
- 12 dried hot red chiles, stemmed, halved crosswise, and seeded
- 5 scallions, white part only, thickly sliced crosswise
- 1 large clove garlic, peeled, ends trimmed off, and thinly sliced
- 1 (1⁄2") piece of ginger, peeled and minced
- 1 ⁄2 cup shelled raw skinless peanuts

- 1 tablespoon olive oil
- 1/2 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 2 stalks celery, sliced
- 1/2 teaspoon paprika
- 1 1/2 teaspoons minced thyme leaves (or 1/2 tsp dried thyme)
- 2 tablespoons minced parsley
- salt and pepper
- 1 -2 russet potato, cut into 1/2 inch cubes, patted dry
