Garlic-Lime Grilled Pork Tenderloin Steaks for Two

- 1 (1-pound) pork tenderloin, trimmed
- 1 1/2 teaspoons grated lime zest plus 2 tablespoons juice
- 2 garlic cloves, minced
- 2 teaspoons honey
- 1 teaspoon fish sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup vegetable oil
- 2 teaspoons mayonnaise
- 2 teaspoons chopped fresh cilantro
- Flake sea salt (optional)
Greek Yogurt with Coffee and Fig Compote

In a medium-sized saucepan, combine the coffee, figs, honey, spices and orange zest
- 1 1/4 c. brewed coffee
- 7 oz. pkg. dried mission figs, stems removed and figs quartered
- 1/4 c. honey (preferably local)
- 1/2 t. cinnamon
- 1/8 t. cardamom
- 1/8 t. cloves
- 1/8 t. nutmeg
- 1 t. orange zest
- 4 (6 oz. containers) Chobani fat-free plain Greek yogurt
Greek Vinaigrette

Combine ingredients in jar: Place all the ingredients in a pint glass jar
- 2 tablespoons red wine vinegar
- 2 tablespoons freshly squeezed lemon juice (from 1/2 medium lemon)
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup olive oil
- 1 ounce Greek sheep's milk feta cheese, crumbled (optional)

Shakshuka with Chickpeas

Preheat the oven to 375 degrees F
- 2 tablespoons extra-virgin olive oil
- 1 onion, chopped
- 3 cloves garlic, thinly sliced
- 1 15 -ounce can no-salt-added chickpeas, drained and rinsed

Three Herb and Tofu Lettuce Wraps with Soy Honey Dipping Sauce

1. Make the tofu filling: Set the tofu on a cutting board and slice horizontally into 3 even layers
- Dipping Sauce:
- One 14-ounce block extra-firm tofu, drained
- 4 scallions, ends removed and white and green parts thinly sliced
- 2 teaspoons grapeseed or canola oil, divided
- 3 medium garlic cloves, finely chopped
