Onion Frittata with Sherry Vinegar Sauce

Heat the oven to 325°F with a rack in the upper-middle position
- 8 large eggs
- Kosher salt and ground black pepper
- 4 tablespoons salted butter, cut into 4 pieces, divided
- 1 medium yellow onion, chopped (about 1 cup)
- 1 medium garlic clove, grated
- 1/4 cup plus 1 teaspoon sherry vinegar
- 1/2 cup grated Parmesan cheese
- 1 tablespoon whole-grain mustard
- 4 tablespoons minced fresh chives, divided
Slow Cooker Beef and Sweet Potato Stew

Toss beef with flour to coat
- TOSS:
- 1 boneless beef chuck roast (2 1/2–3 lb.), trimmed, cut into 1-inch cubes, and seasoned with salt and black pepper

- DEGLAZE:

- 2 poblano chiles, charred, peeled, seeded, and diced
- 1 cup frozen corn kernels, thawed
- 1/2 cup chopped fresh cilantro
