hot 'n spicy artichoke dip

chop (food processor) artichokes, then add all of the remaining ingredients put in a shallow pan or pie plate
- 2 cans (13oz artichoke hearts - NOT MARINATED
- 3/4 cup mayonaise
- 1/3 cup parmesian cheese
- 1/2 tea garlic powder
- 2 sm cans of jalapeno peppers - any kind
- can use one mild/one hot - our choice
Black bean salad

- 1 can black beans, drained
- 1 can corn drained (frozen green giant will do
- 1 red pepper.
- 1 yellow pepper
- 1/2 c red onion
- 1 clove garlic minced
- 1 t cilantro
- 1/4 c olive oil
- 4-5 tbl red wine vinegar
- 1 tsp lime juice
- ground pepper for test
- salt to taste
White Bean salad vinaigrette

combined all ingredients except salad greens cover and chill for 1 - 2 hours serve on beds of salad greens
- 1 can 15oz white beans drained and rinsed
- 2 c sliced celery
- 1/2 c diced red onion
- 1 tsp gr pepper
- 2 tbl fresh thyme leave
- 1 tsp dried thyme
- 1 tsp dried tarragon
- 1/3 c white wine vinegar
- 2 tbs sugar

- 1 pd ground beef - 90%
- 1/3 C ketchup
- 1 TBL worcestershire sauce
- salt and pepper
- 1 1/2 C frozen peas and carrots
- 3 C mashed potatoes
Skinny potato salad

mix cooled/chopped boiled red potatoes, choopped hard boiled eggs, chopped onions, celery,and all other ingredients
- 2 pds red potatoes
- 5 hard boiled eggs
- 3/4 c 2% plain greek yogurt
- 3 stalks celery
- 1/2 c red onion
- 1 tbs dijon mustard
- 1 tbs apple cider or white wine vinegar
- 1 c herbs (like dill or parsley
- 1 tsp salt and pepper
zucchini mini pizza

slice zucchine and bake 15 minute put cheese and basil on to and bake 1-4 minutes

preheat over 350 cook macaroni melt butter whisk in the flour and mustard and keep it moving for about five minutes
- TOPPING:
- 1/2 pd elbow macaroni
- 3 tbl butter
- 3tbl flour
- 1 tbl powdered mustard
- 3 cups milk
- 1/2 cup yellow onion, finely diced
- 1/2 tea paprika
- 1 lg egg
- 12 oz sharp cheddar, shredded
- 1 tea salt

- 2 very ripe bananas - mashed
- 2 eggs
- 1 3/4 C unsifted flour
- 1 1/2 C sugar
- 1/2 C veg oil
- 1/4 C plus 1 TBL buttermilk
- 1 C chopped walnuts
