A big soft Pumpkin Snickerdoodle cookie baked in a skillet
- Cookie:
- 2 cups all purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 teaspoons pumpkin pie spice (or cinnamon)
- 6 tablespoons unsalted butter, softened
- 1/3 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- Topping:
- 1 tablespoon granulated sugar
- 1/4 teaspoon pumpkin pie spice (or cinnamon)
- ice cream and caramel sauce (optional, for serving)
