- For the Cake:
- 1 (16.5 oz.) box Devil's Food chocolate cake mix + ingredients to prepare cake, as specified on the box
- 1 (14 oz.) can sweetened condensed milk
- 1 c. cream of coconut*
- 1 c. sweetened flaked coconut
- For the Coconut Whipped Cream Frosting:
- 1 1/2 c. (12 oz.) whipping cream
- 1/2 c. (4 oz.) cream of coconut*
- small pinch salt
- 1 c. sweetened flaked coconut
- 2 oz. semi-sweet chocolate squares (or about 1/4 c. semi-sweet chocolate chips)
- 1 tsp. shortening
Southern Strawberry-Coconut Punch Bowl Cake

- 1 angel food cake (14 oz. store-bought or bake your own)
- 1 (16 oz.) container sour cream
- 1 (8 oz.) container Cool Whip non-dairy whipped topping
- 1 (5 1/2 oz.) can evaporated milk
- 3/4 c. powdered (confectioners) sugar
- 4 About 4 c. thinly sliced fresh strawberries
- 3/4 c. coconut
- 1/4 c. chopped pecans

Around our house, we often make these yummy shakes
- 1 cup fat-free milk
- 1 can (8 ounces) unsweetened crushed pineapple
- 1/2 cup unsweetened pineapple juice
- 3 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon coconut extract
- 6 ice cubes
- I used Splenda instead of sugar and it came out just as nice and since mom and I are both diabetic, we really loved this.
Chocolate Almond Ricotta Cookies

Chocolate Almond Ricotta Cookies are soft, moist, cake-like cookies that are so easy to make
- 1 cup unsalted butter softened
- 2 cups granulated sugar
- 3 large eggs
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 2 cups Ricotta Cheese part skim
- 1/3 heaping cup dark chocolate baking cocoa
- 3-2/3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips- for mixing
- 1 cup milk chocolate chips for the tops
- 1/2 cup slivered almonds for the top

- 7 T. all-purpose flour
- 1 1/2 c. milk
- 1 1/2 T. pure vanilla extract
- 1 1/2 c. salted butter
- 1 1/2 c. granulated sugar

First thing’s first. If you don’t have a mini bundt pan, you can use a mini loaf pan
- 1 and 3/4 cups (220g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 4 large eggs, at room temperature
- 1/2 cup (120g) full-fat sour cream, at room temperature
- 1 and 1/2 teaspoons pure vanilla extract
- seeds scraped from 1/2 of a vanilla bean
- 1/2 teaspoon almond extract (optional but recommended!)
