This cake is incredibly easy, and takes no time at all

  • FOR THE STREUSEL
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1 tablespoon finely grated lemon zest (about one lemon)
  • 3 tablespoons cold unsalted butter, cut into 1/2-inch chunks
  • FOR THE CAKE
  • 1 1/2 cups blueberries, preferably fresh
  • 2 tablespoons all-purpose flour
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened and cut into 1 tablespoon pieces
  • 1 1/2 cups sour cream (I used low fat and it worked great)
  • 3 eggs, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon finely grated lemon zest (about one lemon)
