- 1/2 cup butter, softened
- 1/2 cup brown sugar

- 2 1/2 cups flour
- 1 teaspoon baking powder

Lemon Blueberry Cake

This cake is incredibly easy, and takes no time at all
- FOR THE STREUSEL
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1 tablespoon finely grated lemon zest (about one lemon)
- 3 tablespoons cold unsalted butter, cut into 1/2-inch chunks
- FOR THE CAKE
- 1 1/2 cups blueberries, preferably fresh
- 2 tablespoons all-purpose flour
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, softened and cut into 1 tablespoon pieces
- 1 1/2 cups sour cream (I used low fat and it worked great)
- 3 eggs, at room temperature
- 1 1/2 teaspoons vanilla extract
- 1 tablespoon finely grated lemon zest (about one lemon)
