Pumpkin Ice Cream Roll

This wonderful light and lovely dessert is our standby at Thanksgiving and Christmas
- 3/4 cup all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- Dash salt
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- Confectioners' sugar
- 1 quart butter pecan ice cream, softened
- Whipped cream, optional
- Toasted chopped pecans, optional

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 14 tablespoons (1 3/4 sticks) unsalted butter, room temperature
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup granola (we used Nature Valley Protein Oats 'N Honey granola) or other cereal*
- 1/2 cup crushed salted pretzel pieces (we used Pretzel Crisps) or other salty snack food
- 1 cup semi-sweet chocolate chips (we used Nestle’s Toll House morsels) or other chopped chocolate bar
- 1/2 cup chopped pecans, or other nuts (*if you decide to leave out nuts, then increase the amount of granola by 1/2 cup)
Blueberry Pound Cake

If you can, try and make it a day ahead of time
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1 1/2 cups white sugar + 3 TBSP sugar, divided
- 4 eggs
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries + about 1/3 cup more for top (about 12 oz total)
Chocolate Chip Bundt Cake

This Chocolate Chip Bundt Cake is super easy to make, and comes out moist and delicious every time
- Frosting:
- 1 box white or yellow cake mix
- 1 3 oz box vanilla instant pudding mix
- 4 eggs
- 1 cup sour cream
- 1/2 cup oil
- 1/2 cup water
- 1 cup chocolate chips (mini work the best)
- 1/4 cup butter, very soft
- 3 Tbsp cocoa
- dash salt
- 2 cups powdered sugar
- 1 tsp vanilla
- 3-4 Tbsp milk
