Chicken Marsala Recipe

Flatten chicken to 1/2-in
- 6 boneless skinless chicken breast halves (4 ounces each)
- 1 cup fat-free Italian salad dressing
- 1 tablespoon all-purpose flour
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon pepper
- 2 tablespoons olive oil, divided
- 1 tablespoon butter
- 1/2 cup reduced-sodium chicken broth
- 1/2 cup marsala wine or 3 tablespoons unsweetened apple juice plus 5 tablespoons additional reduced-sodium chicken broth
- 1 pound sliced fresh mushrooms
- 1/2 cup minced fresh parsley
Chocolate-Covered Cheesecake Squares

Line a 9-in. square baking pan with foil and grease the foil
- CRUST:
- 1 cup graham cracker crumbs
- 1/4 cup finely chopped pecans
- 1/4 cup butter, melted
- FILLING:
- 2 packages (8 ounces each) cream cheese, softened
- 1/2 cup sugar
- 1/4 cup sour cream
- 2 eggs, lightly beaten
- 1/2 teaspoon vanilla extract
- COATING:
- 24 ounces semisweet chocolate, chopped
- 3 tablespoons shortening
Peanut Butter and Chocolate Biscotti

Position racks evenly in the oven and preheat to 350 degrees F
- 10 tablespoons unsalted butter (1 stick plus 2 tablespoons)
- 2 1/2 cups all-purpose flour
- 2 3/4 teaspoons baking powder
- 1/2 teaspoon fine salt
- 3 large eggs
- 1 1/4 cups sugar
- 2 teaspoons pure vanilla extract
- 1/2 cup smooth natural peanut butter, room temperature
- 1 1/4 cups dry roasted peanuts
- 1 1/4 cups chopped dark chocolate or chocolate chunks (about 6 ounces)
Drop Doughnuts

These doughnuts are dropped from a spoon in to the hot oil so – NO HOLES
- 2 Tbsp. butter ( real butter )
- 2 eggs
- 3/4 Cup sugar
- 1 cup milk
- 3 tsp.Baking powder
- 3 cups white flour
- a dash of salt
- 1 tsp. Vanilla
- Let butter soften, add the sugar and eggs. cream together.
- Add milk and the dry ingredients. Mix together.
- Chill - for 2 to 3 hours
- Heat oil in a large pan, use vegetable oil or canola,
- just enough to keep the doughnuts off the bottom of
- the pan. Maybe 2 inches deep. Drop the dough into the hot oil and when they are golden brown on one side turn them with a fork - to brown on both sides.

Scrub the clams and rinse clean
- 8 pounds small quahogs or large cherrystone clams
- 4 ounces slab bacon, rind removed and diced
- 4 tablespoons butter
- 2 onions, diced
- 2 cloves garlic, diced
- 2 stalks celery, diced
- 5-6 sprigs fresh thyme, leaves removed and chopped
- 2 bay leaves
- 2 pounds Yukon gold potatoes, peeled and cut into 1/2-inch dice
- 2 cups heavy cream
- freshly ground pepper, to taste
- Kosher or sea salt, to taste
- 2 tablespoons fresh Italian parsley, chopped, for garnish
- 2 tablespoons fresh chives, chopped, for garnish

- 1 teaspoon vanilla extract

- 1/2 teaspoon red gel-paste food color (2 oz liquid - 2 bottles)

- 1 cup buttermilk (or soured milk 2 tsp lemon juice with 1 cup milk)
