Easy Chicken Enchiladas

Spinach Casserole

Excellent Spinach Casserole from Nancy Stock
- 1 Can Progresso Artichoke hearts, drained and chopped (cut in 1/8's)
- 2 pkgs chopped frozen spinach, cooked and drained
- 1 can cream of mushroom soup
- 1/2 tsp garlic powder
- 1 tsp lemon juice
- 1 can mushrooms drained
- 1/2 cup mayonaise
- 1/2 cup sour cream
- grated chedder cheese
Broccoli Salad

Traditional Raisin and Broccoli Salad
- 2 Bunches of Broccoli flowerets
- 1 Bag of Cheddar Cheese shredded
- 8 slices of crisp bacon,crumbled
- 1/4 cup chopped red onion
- 3/4 cup raisins
- Dressing
- 1/2 cup mayonaise
- 2 tsp vinegar
- 1/4 cup sugar

Cucumber Yogurt Dip

BJs Journal 2008 English style gormet seedless cucumbers make this cooling dip easy to assemble
- 2 gourmet mini seedless cucumbers
- 1 cup fat-free plain yogurt, drained
- 1 cup fat-free sour cream
- 1 tsp lemon juice
- 1 tsp chopped mixed herbs (parsley, dill, mint, basil, etc)
- Salt and pepper
Tempura

Sift the first two ingredients and mix the next three
- Ginger:
- 1 C. flour
- 1 tsp. cornstarch
- 1 egg beaten
- 1 tbsp. sake
- 1 C. water
- (dressing)
- 2 tsp. rice white sweet Mirin
- 1/2 tsp. salt
- 3/4 ginger root
- 1 tbsp. sake (rice wine)
- 3 tbsp. soy sauce
Pecan Dream Bars

Mix the first 3 ingredients till crumbly, press into greased oblong cake pan
- 1 Pillsbury plus/yellow cake Mix
- 1 Egg
- 1/3 cup softened margarine
- 1 can Eagle brand condensed milk
- 1 Egg
- 1 teaspoon vanilla
- 1/2 cup Bit-O-Brickles (hard English Toffee, like in Heath bars)
- 1 cup pecans
Orange Salad

- 3 large oranges
- 3 large lemons
- Head lettuce
- 1/2 tsp. fresh mint
- 4 tbsp. oil olive
- Salt and pepper to taste

In a medium bowl, gently combine avocado, corn kernels, tomatoes, lime juice, cilantro, chili peppers, and salt
- 2 small to medium Avocados, peeled, seeded, and finely diced
- 1 cup fresh or frozen corn kernels
- 2 medium tomatoes, seeded and finely diced
- 2 to 3 tbsp. Lime juice
- 1 tbsp. finely chopped fresh cilantro
- 1/2 to 1 tsp minced hot green chili peppers
- 1/2 tsp salt
