Apricot Chicken

- 1 bottle Seven Seas Russian dressing
- 3/4 cup apricot preserves
- 3 whole chicken breasts
- 1/3 cup water (optional)
- 1 envelope onion soup mix
Scallop

Sauté scallops in butter on high only a moment
- 1 C. scallops
- 3 tbsp. butter
- 1 clove garlic, crushed
- 1 tomato, chopped
- 1 small onion chopped
- 2 tbsp. fresh parsley chopped
- 1/8 tsp. Rosemary
- 2 tbsp. olive oil
- Salt and pepper to taste
Key Lime Pie

In large, heat resistant bowl, dissolve gelatin in boiling water
- 1 Ready crust reduced fat Graham Cracker pie crust (6 oz.)
- 1 pkg. (4 serving size) sugar free lime flavor gelatin
- 1/4 cup boiling water
- 2 containers (6 oz.) key lime pie flavor light yogurt
- 1 tub (8 oz.) fat-free whipped topping, thawed
Ham Soup

Cook bone in broth with cauliflower, celery, carrots, onion, garlic and bay leaf for an hour or so

- 50 oz. can chicken broth (6 gr.)
- 16 oz. frozen cauliflower (15g. –l0g. fiber=5g.)
- 3 mini carrots (1 oz.) grated (2.3g.)
- 1/4 c. chopped onion (3.5g.)
- 1/4 c. chopped celery
- 2 cloves garlic, minced
- Bay leaf
- Salt and pepper to taste
Ham and Rice Casserole

Cook rice and onion in oil till rice is lightly browned, stirring frequently
- 3/4 C. long grain rice (not quick cooking)
- 1/2 C. chopped onion
- 2 tbsp. oil
- 2 C. cubed ham
- 1 can green beans
- 1-10 1/2 oz. can Campbell’s beef broth bouillon
Broccoli n’ Cauliflower Salad

Combine first 5 ingredients in a large bowl; set aside
- 1 small head cauliflower, broken into flowerets
- 1 pound broccoli, broken into flowerets
- 1/2 pound fresh mushrooms, sliced
- 1 small purple onion, sliced and separated into rings
- 2 stalks celery, sliced
- 1 cup vegetable oil
- 1/2 cup white wine vinegar
- 1/2 cup sugar
- 1 tablespoon Italian seasoning
- 2 teaspoons dry mustard
- 1 teaspoon salt
- Lettuce leaves (optional)
Peach Cobbler Desserts

Slice peaches and mix in ¾ cup sugar
- 4 cups sliced peaches
- 3/4 stick butter
- 3/4 cup sugar
- 3/4 cup flour
- 1/4 tsp. salt
- 3/4 cup milk
- 2 tsp. baking powder
Olive n’ Cheese Ball

Blend cheeses and butter. Stir in olives and chives
- 1 8 oz. pkg. cream cheese
- 3 oz. pkg. blue cheese
- 1/4 cup soft butter
- 2/3 cup well drained olives- chopped
- 1/3 cup of chopped walnuts
- 1 tbs. minced chives – optional
Spinach Casserole

- 1 can artichoke hearts, drained and chopped (cut in 1/8’s) Progresso
- 2 pkg. chopped frozen spinach cooked and drained
- 1 can cream of mushroom sup
- 1/2 tsp. garlic powder
- 1 tsp. lemon juice
- 1 can mushrooms drained
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- Cheddar cheese (grated)
