BLACKOUT CAKE WITH CHOCOLATE CRUNCH

Directions Make the cake: Preheat the oven to 350 degrees F
- 1 stick unsalted butter, at room temperature, plus more for the pans
- 2 1/2 cups all-purpose flour, plus more for the pans
- 4 ounces semisweet chocolate, chopped
- 1 1/2 cups whole milk
- 1/2 cup unsweetened cocoa powder (not Dutch-process)
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1 1/2 cups packed dark brown sugar
- 1/2 cup granulated sugar
- 1 tablespoon pure vanilla extract
- 4 large eggs
- 24 ounces semisweet chocolate, roughly chopped
- 1/3 cup light corn syrup
- 1 tablespoon pure vanilla extract
- 2 1/2 sticks (20 tablespoons) unsalted butter, cut into pieces, at room temperature
- 2 1/2 cups confectioners' sugar

PORK ROASTED TENDERLOIN WITH APPLE SAUCE, APPLED WILD RICE, AND GREENS Yields: ? Servings Preparation Time: ...
- For the pork:
- One 1 1/4 pound pork tenderloin
- 2 teaspoons vegetable oil
- salt and pepper to taste
- 1/2 cup naturally sweetened apple juice or apple cider
- 1/2 cup apple sauce - no sugar added
- 1/2 cup low-sodium chicken broth
- 1 tablespoon low-sodium soy sauce
- 1 single-serving package of golden raisins
- 1/2 teaspoon ground ginger
- For the greens:
- one bunch Swiss chard
- 1/2 cup thinly sliced onion
- 1/4 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1 tablespoon extra virgin olive oil
- For the rice:
- I used the Lundberg Wild Blend of rice, replacing half of the liquid on the package directions with apple juice. Once it was cooked, I tossed in small amount of toasted pecans.
BAKED RAVIOLI

1 Heat oven to 350°F. Spray bottom and sides of rectangular baking dish 13x9x2-inches, with cooking spray
- 1 jar (26 to 28 ounces) tomato pasta sauce (any variety)
- 1 package (25 to 27 1/2 ounces) frozen cheese-filled ravioli
- 2 cups shredded mozzarella cheese (8 ounces)
- 2 tablespoons grated Parmesan cheese

- 4 cups thinly sliced potatoes
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese, to sprinkle on top

TILAPIA - PAN FRIED

- 2 teaspoons seafood seasoning
- 1 teaspoon salt
