Grilled Chicken Pizza

1. Prepare Chicken. Combine basil leaves, olive oil, vinegar, salt and pepper in a blender or mini chopper
- 1 cup fresh basil leaves, torn
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound boneless, skinless chicken breast halves
- 1 pound frozen pizza dough, thawed in the refrigerator
- 2 tablespoons olive oil
- 1/2 cup jarred pizza sauce (such as Ragú)
- 2 cups shredded mozzarella cheese
- 2 tablespoons grated Parmesan or Romano cheese
- 3 tablespoons shredded fresh basil leaves

NOTE: Getting the initial oil temperature to 375 degrees is key to the success of this recipe
- For the gravy:
- 3 cups unbleached all-purpose flour
- 1/8 teaspoon cayenne pepper
- 1 large egg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 6 cube steaks , about 5 ounces each, pounded to 1/3 inch thickness
- 4 - 5 cups peanut oil (or vegetable oil)
- 1/4 grease (from the pan, after cooking the steaks
- 1/3 cup flour
- 2 cups milk (note:I used 1 1/2 cups milk and 1/4 chicken stock)
