Homemade Granola Bars

Preheat the oven to 350 degrees F
- 2 cups old-fashioned oatmeal
- 1 cup sliced almonds
- 1 cup shredded coconut, loosely packed
- 1/2 cup toasted wheat germ
- 3 tablespoons unsalted butter
- 2/3 cup honey
- 1/4 cup light brown sugar, lightly packed
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon kosher salt
- 1/2 cup chopped pitted dates
- 1/2 cup chopped dried apricots
- 1/2 cup dried cranberries

- 1 1/2 pounds ground chuck
- 1 pound ground Italian sausage
- 1 onion
- 2 cloves garlic, minced
- 2 teaspoons ground oregano
- 1 teaspoon ground basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano
- 2 (15-ounce) cans tomato sauce
- 1 (6-ounce) can tomato paste
- 1 1/2 cups small curd cottage cheese
- 1 (5-ounce) package grated Parmigianno-Reggiano
- 2 tablespoons freshly chopped parsley leaves
- 2 large eggs, lightly beaten
- 9 oven-ready lasagna noodles
- 2 (8-ounce) packages shredded mozzarella
Coconut Shrimp with Pineapple Habanero Chutney

- 2/3 cu pall-purpose flour
- 1/2 cup cornstarch
- 1 large egg, beaten
- 2/3 cup grated fresh coconut
- 1 cup ice-cold soda water
- 1/2 teaspoon salt
- 1 pound large shrimp, peeled, deveined and tail on
- 1 1/2 tablespoons Essence, recipe follows
- Pineapple-Habanero Chutney, for serving, recipe follows
- 1 tablespoon finely chopped fresh cilantro leaves
Baked Ziti with Homemade Sauce

1. Put olive oil in a large skillet and heat it over medium heat
- For the sauce:
- 1 tablespoon olive oil
- 1 cup yellow onion , chopped
- 1 1/2 teaspoons minced garlic
- 1/2 cup red wine, such as Chianti (chicken stock or vegetable stock works as a substitute)
- 1 28-ounce can crushed tomatoes
- 1 tablespoon chopped fresh flat-leaf parsley (or 1 teaspoon of dried parsley)
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- For the baked ziti:
- 12 ounces rigatoni, penne, or ziti pasta
- 3 tablespoons extra virgin olive oil
- 3 spicy Italian sausages, casings removed (vegetarians can omit or use veggie sausages)
- 1/2 yellow onion, diced
- 1 green bell pepper, seeded and diced
- 2 garlic cloves, minced
- 2 1/2 cups homemade (recipe below) or store-bought marinara
- 1 cup part-skim mozzarella cheese
- 1/2 Parmesan cheese, grated
- Salt and pepper to taste
Corn Dogs

- 1 gallon peanut oil
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 teaspoons kosher salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon cayenne pepper
- 2 tablespoons (approximately 1 large) jalapeno pepper, seeded and finely minced
- 1 (8.5-ounce) can cream-style corn
- 1/3 cup finely grated onion
- 1 1/2 cups buttermilk
- 4 tablespoons cornstarch, for dredging

Spicy Chicken Rigatoni

In a sauté pan, heat oil over medium heat
- 1/4 cup oil
- 1/2 Tbs crushed red pepper
- 1/8 tsp salt
- 1/8 tsp ground black pepper
- 1 Tbs chopped garlic
- 6 oz chicken, sliced
- 3/4 cup. Marinara sauce
- 1/2 cup Alfredo sauce
- 2 tsp butter
- 1/4 cup peas
- 1 lb Rigatoni pasta, cooked according to package directions
- additional 1/2 t crushed red pepper (for garnish)

- 1 3/4 cups Graham crackers crumbs
- 1/2 cup butter, melted
- 1 (14oz.) can sweetened condensed milk
- 1 (12oz) pkg. chocolate chips
- 1 teaspoon vanilla
- 1 cup chopped nuts

- 1 cup kosher salt
- 1/2 cup light brown sugar
- 1 gallon vegetable stock
- 1 tablespoon black peppercorns
