1. Put olive oil in a large skillet and heat it over medium heat

  • For the sauce:
  • 1 tablespoon olive oil
  • 1 cup yellow onion , chopped
  • 1 1/2 teaspoons minced garlic
  • 1/2 cup red wine, such as Chianti (chicken stock or vegetable stock works as a substitute)
  • 1 28-ounce can crushed tomatoes
  • 1 tablespoon chopped fresh flat-leaf parsley (or 1 teaspoon of dried parsley)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • For the baked ziti:
  • 12 ounces rigatoni, penne, or ziti pasta
  • 3 tablespoons extra virgin olive oil
  • 3 spicy Italian sausages, casings removed (vegetarians can omit or use veggie sausages)
  • 1/2 yellow onion, diced
  • 1 green bell pepper, seeded and diced
  • 2 garlic cloves, minced
  • 2 1/2 cups homemade (recipe below) or store-bought marinara
  • 1 cup part-skim mozzarella cheese
  • 1/2 Parmesan cheese, grated
  • Salt and pepper to taste
