- 1/4 cup freshly squeezed orange juice
- 1 1/2 cups heavy whipping cream
- 3/4 cup whole milk
- 1/8 teaspoon salt
- 2 large eggs
- 3/4 cup chopped blueberry pie pieces
Meatballs with Sauteed Veggies

Directions Heat oil in large skillet over medium heat
- 2 tbsp olive oil
- 1 onion, chopped (1 1/2 c)
- 2 carrots, grated (1 c)
- 3 cloves garlic, minced
- 1/2 C dry white wine
- 2 pt cherry tomatoes, halved (1 1/4 lb)
- 1 lb frozen fully cooked turkey, beef, or vegetarian meatballs
- 1 bunch (10 oz) kale, tough ribs removed and leaves coarsely chopped

- 1-1/2 cups blueberries, picked over and rinsed
- 1-1/2 teaspoons orange zest
- 3 tablespoons cornstarch
- 1/2 cup fresh squeezed orange juice
- 1-1/2 cups water
- 1-1/2 cups sugar
Sweet potato salad

- 2 pounds sweet potatoes
- 1-1/2 cups mayonnaise (or Miracle Whip Lite)
- 2 tsp. Dijon mustard
- 1/2 tsp. sea salt
- 5 hard-cooked eggs, chopped
- 1-1/2 cups finely chopped celery
- 12 green onions, thinly sliced
Apple Butter (overnight in slow cooker)

An easy way to make apple butter - in the slow cooker! This uses less sugar as well!
- 1 * 1 cup packed brown sugar
- 1/2 * 1/2 cup honey
- 1/4 * 1/4 cup apple cider
- 1 * 1 tablespoon ground cinnamon
- 1/4 * 1/4 teaspoon ground cloves
- 1/8 * 1/8 teaspoon ground mace
- 10 * 10 medium Granny Smith apples, peeled, cored, and cut into large chunks (about 2 1/2 pounds)

- 1 * 1 cup mixed nuts
- 1/2 * 1/2 cup sunflower kernels
