- Salad:
- 1/2 cup olive oil
- 2 TB. red wine vinegar
- 4 tsp. lemon juice
- 4 tsp. honey
- Salt & pepper to taste
- 2 cups farro (uncooked)
- 6 cups vegetable stock
- 1-1/2 cups cherry tomatoes, halved/quartered
- 1 medium red onion, finely chopped
- 1 cup mozzarella, cubed
- 1/2 cup finely chopped basil

Pumpkin Spice Latte

Marshmallows (Light as snow)

- 3 packages unflavored gelatin
- 1-1/4 cups ice water, divided
- 2 cups C & H granulated sugar
- 1/2 cup light corn syrup
- 2 tsp. vanilla or almond extract
- 3/4 cup C & H powdered sugar, divided
- 1/4 tsp. salt
- 1-2 drops food coloring (0ptional)
- Non-stick cooking spray

Hawaiian Chicken Salad

In a large bowl combine the first 10 ingredients
- 5 cups cubed cooked chicken
- 1 can (16 ounces) pineapple chunks, drained
- 1 can (8 ounces) sliced water chestnuts, drained
- 1 cup julienned green pepper
- 1 cup seedless green grapes
- 1 cup seedless red grapes
- 1 cup (4 ounces) shredded cheddar cheese
- 3/4 cup salted cashews
- 1/2 cup chopped celery
- 1/2 cup chopped green onions
- Poppy seed dressing

- 1 large sweet red pepper, cut into strips
- 1/2 cup thinly sliced sweet onion
- 1/4 cup thinly sliced celery
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Mashed Potatoes (garlic) Crock Pot

1. Wash potatoes well. Peel most of the outer coating off
- 5 pounds red potatoes
- 3 cloves garlic
- salt and pepper
- 1 t chicken bullion granules
- 1 C water
- 8 T butter, divided
- 1/3 C sour cream
- 1/2 C milk
Pumpkin Muffins - Whole Grain

1. Preheat oven to 350 degrees
- 1 1/2 cups whole-spelt or whole-wheat flour
- 1 tablespoon pumpkin pie spice blend (sold in the spice aisle)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 2 eggs
- 1/2 cup honey
- 1/3 cup melted butter*
- 1 cup canned pumpkin puree (not pie filling)
- You can swap butter for 1/3 cup coconut oil if you avoid dairy.
