Carrot Cake Cookies

1. Preheat oven to 350 degrees
- * FOR THE FILLING:
- Makes 18
- 2 * 2 ounces bar cream cheese, room temperature
- 2 * 2 ounces unsalted butter, room temperature
- 1/4 * 1/4 cup confectioners' sugar
- 1 * 1 teaspoon fresh lemon juice
- * FOR THE COOKIES:
- 1/2 * 1/2 cup (1 stick) unsalted butter, melted
- 1/2 * 1/2 cup packed light-brown sugar
- 1/4 * 1/4 cup granulated sugar
- 1 * 1 large egg yolk
- 3/4 * 3/4 cup all-purpose flour
- 1 * 1 teaspoon ground ginger
- 1/2 * 1/2 teaspoon salt
- 1 * 1 cup rolled oats
- 3/4 * 3/4 cup packed, finely grated, peeled carrots
- 1/3 * 1/3 cup raisins
Rose's Taco Salad

This is a taco salad my cousin, Rose, makes and it is very good
- 1-2 1-2 1-2 lbs turkey meat

- tortilla chips
- If I make this for Jon, I add green onions because he likes them. For my friends I don't put onions in it.
Outrageous Chocolate Cookies

1. Preheat oven to 350 degrees
- 8 ounces semisweet chocolate, roughly chopped
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup packed light-brown sugar
- 1 teaspoon vanilla extract
- 1 package (12 ounces) semisweet chocolate chunks
Chicken Salad

DIRECTIONS DRAIN oranges and pat dry
- Salad:
- 1 (15 ounce) can mandarin orange slices
- 4 cups cooked chicken, cut into 1 inch cubes
- 1/2 cup celery, finely chopped
- 1/4 cup yellow onion, finely chopped
- 2 cups red seedless grapes
- Dressing:
- 1 cup plain yogurt
- 1/4 cup SPLENDA® ESSENTIALS™ No Calorie Sweetener with Fiber, Granulated
- 1/4 teaspoon garlic powder
- 1 teaspoon salt
Fluffy Apple Dip

- 1 * 1 tablespoon peanut butter
- 1/2 * 1/2 teaspoon pumpkin pie spice
- 1 * 1 jar (7 ounces) marshmallow creme
- * Assorted apple wedges
Triple Chocolate Mousse Cake
