My Neighbor Renee's Perfect Chili!

- 2 (16 ounce) cans pinto beans and chili peppers onions and garlic in zesty tomato sauce
- 2 tablespoons extra virgin olive oil
- 1 1/2-2 yellow onions, diced
- 1 large green bell pepper
- 1 large yellow bell pepper
- 1 orange, testing
- 1 large orange bell pepper
- 2 garlic cloves
- salt and pepper, to taste
- crushed red pepper flakes, to taste
- cayenne pepper, to taste
- chili powder, to taste

- chopped green onion
- shredded monterey jack cheese or cheddar cheese
- sour cream
Mini-Raspberry Cupcakes Recipe

1. Heat oven to 350ºF. Line mini– muffin pans with paper liners
- 1 stick (1⁄2 cup) unsalted butter, softened
- 3 ⁄4 cup sugar
- 11 ⁄2 tsp baking powder
- 1 ⁄4 tsp salt
- 2 large eggs
- 1 tsp raspberry or vanilla extract
- 1 ⁄2 cup milk
- 11 ⁄3 cup all-purpose flour
- Raspberry Buttercream
- 1 stick (1⁄2 cup) unsalted butter, softened
- 4 cups confectioners’ sugar
- 4 Tbsp milk
- 1 tsp raspberry or vanilla extract
- 1 ⁄2 tsp salt
- Red or pink gel or liquid food color (optional)

Place all ingredients in bread machine except reserve 1 cup of cheddar cheese, 1 tbsp of onion and 2 tbsp

- 3 c. Bread flour
- ½ tsp. Salt
- 1 tbsp Sugar

- 1 c. Milk
- 2 c. Shredded cheddar cheese (divided)

Peach Potpie

- 8 ripe peaches (about 3 1/2 lbs) halved, pitted, and sliced into 1/2 inch thick wedges
- 1 tbsp plus 1 1/2 tsp cornstarch
- 1 tbsp plus 1 tsp fresh lemon juice

- 2/3 cup packed light-brown sugar

- 2 cups (8 ounces) shredded cheddar cheese, divided
- 2 tablespoons water
- 2 to 4 tablespoons taco seasoning

- 1/2 medium head iceberg lettuce, shredded

- 1 clove Garlic pressed
- 1 tablespoon Italian Seasoning
- 1 package Grand Size Biscuits or 10.2 oz package of biscuts
Ham and Cheese Crescent Roll-Ups

1) Heat oven to 350°F. Separate dough into 8 triangles
- 1 can (8 oz) Pillsbury refrigerated crescent dinner rolls
- 8 thin slices cooked ham (8 oz)
- 4 thin slices Cheddar cheese (4 oz), each cut into 4 strips or Pepper Jack Cheese to give it some spice

- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 Tbl sugar
- 1/2 cup cold butter, cut into small pieces
- 3/4 cup milk
- 1 large egg, lightly beaten
- Melted butter to top biscuits
