Ultimate Chocolate Chip Cookies

1. Sift flours, baking soda, baking powder and salt into a bowl
- 2 cups minus 2 tablespoons (8 1/2 ounces) cake flour
- 1 2/3 cups (8 1/2 ounces) bread flour
- 1 1/4 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons coarse salt
- 2 1/2 sticks (1 1/4 cups) unsalted butter
- 1 1/4 cups (10 ounces) light brown sugar
- 1 cup plus 2 tablespoons (8 ounces) granulated sugar
- 2 large eggs
- 2 teaspoons natural vanilla extract
- 1 1/4 pounds bittersweet chocolate disks or fèves, at least 60 percent cacao content (Buy it)
- Sea Salt
Blackberry Cobbler

To make the sauce: Put the blackberries and water in a nonreactive saucepan
- Blackberry Sauce:
- 6 cups fresh blackberries
- 2 1/2 cups water
- 1/4 teaspoon salt
- 3/4 - 1 cup granulated sugar
- Dumplings:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter, chilled
- 3/4 cup half and half
- 2 tablespoons unsalted butter cut into small pieces
- 6 tablespoons sugar
Creamy Artichoke Dip

In a medium bowl, pour 1 cup water over bread
- 4 slices day-old crusty white bread with crusts removed, torn into 2-inch pieces (3 cups)
- 2 anchovy fillets, drained
- 1 box (9 ounces) frozen artichoke hearts, thawed and drained
- 1/2 teaspoon sugar
- 2/3 cup extra-virgin olive oil, plus more for serving
- 3 tablespoons fresh lemon juice
- Coarse salt and ground pepper
- Chopped fresh chives, for serving
Cowboy Caviar

Mix all of the above....Enjoy with tortilla chips
- Dressing:
- 1 can white corn, drained
- 1 can black-eyed peas, rinsed
- 2 large tomatoes, diced small
- 2 large avocados, diced small
- 1 bunch green onions, sliced
- 1 bunch cilantro, chopped
- 1/4 C olive oil
- 1/4 C red wine vinegar
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cumin
- 1 large clove garlic, minced
Basil Shrimp with Feta and Orzo

- 1 regular-size foil oven bag (I used a corningware dish (covered) - sprayed with Pam)
- 1/2 cup uncooked orzo
- 2 teaspoons olive oil, divided
- 1 cup diced fresh tomato
- 3/4 cup sliced green onions
- 1/2 cup (2 ounces) crumbled feta cheese (I used more)
- 1/2 teaspoon grated lemon peel
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 pound large shrimp, peeled and deveined
- 1/4 Cup fresh chopped basil
Spinach, Apple, and Cheddar Cheese Salad

Combine vinegar, maple syrup, and oil in small bowl
- 1/4 Cup balsamic vinegar
- 1/4 Cup pure maple syrup
- 1/4 Cup olive oil
- 2 6oz packages baby spinach leaves
- 2 Large unpeeled granny smith apples, halved, cored, thinly sliced
- 8 OZ extra sharp cheddar cheese, cut into 1/2 inch cubes
- 1/2 Cup chopped toasted walnuts
Queso Dip

Cook butter and flour in a saucepan over medium heat, stirring, 1 minute
- 1 Tablespoon butter
- 1 Tablespoon flour
- 1/2 lb shredded cheddar cheese
- 1/4 Cup cream cheese
- 1/4 Cup milk
- 1/4 Cup jarred salsa
Molten Chocolate Mint Cakes

Preheat the oven to 450. Grease and flour six 6 oz ramekins
- 1 1/2 Sticks (6 oz) unsalted butter, cut into cubes
- 6 oz semisweet chocolate, chopped
- 3 Large eggs plus 2 large egg yolks
- 1/4 Cup plus 2 Tablespoons granulated sugar
- 4 1/2 Tablespoons flour
- 6 Chocolate-mint wafer candies, such as After Eight Thin Mints, quartered
- Confectioners sugar, for dusting
Blue Cheese and Walnut Spread

In a medium bowl, stir cream cheese with a wooden spoon until softened
- 4-ounce bar of cream cheese, room temperature
- 1/2 cup walnuts, chopped
- Coarse salt and ground pepper
- 4 ounces (1 cup) cold crumbled blue cheese, such as Stilton
- Crackers or crostini, for serving
Black Bean Salsa

- 1/3 Cup finely chopped red bell pepper
- 1/3 Cup finely chopped red onion
- 1/4 Cup chopped cucumber
- 1/4 Cup diced tomato
- 2 Tablespoons chopped celery
- 2 Tablespoons chopped seeded jalapeno pepper
- 1 Tablespoon chopped fresh basil
- 2 Tablespoons olive oil
- 2 Tablespoons balsamic vinegar
- 1 Tablespoon fresh lime juice
- 1 1/2 teaspoons minced fresh or 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
- 3 garlic cloves, minced
- 2 (15 oz) cans black beans, rinsed and drained
