Turkey Avocado Enchiladas

Instructions Preheat oven to 350 degrees
- 3 cups cooked turkey
- 1 1/2 cups salsa (whatever is your favorite)
- 8 corn tortillas
- 2 1/2 cups Cheddar cheese
- 2 Tbls butter
- 2 Tbls flour
- 2 cups chicken broth
- 3/4 cup sour cream (I used light)
- 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 2 large avocados, peeled and pitted
- 1 Tbls cilantro, finely chopped
- 1 lime, juiced
BBQ Chicken Sliders

Preheat oven to 425 degrees F
- 1/3 cup grape jelly or seedless raspberry jam
- 1/3 cup barbecue sauce
- 2 tablespoons fine dry bread crumbs
- 2 tablespoons finely chopped honey roasted walnuts or almonds
- 1 tablespoon barbecue sauce
- 1/2 teaspoon poultry seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 8 ounces ground chicken
- 1/2 cup shredded Italian cheese blend or Monterey Jack cheese with jalapeno peppers, or crumbled Gorgonzola cheese (2 ounces)
- Lettuce leaves and/or tomato slices (optional)
- 8 dinner rolls or cocktail-size hamburger buns, split

Preheat oven to 425 degrees
- 2-1/2 c chicken,cooked,shredded
- 2 Tbs vegetable oil
- 1/2 c chopped onion (1 small)
- 2 garlic cloves,minced
- 2 mild green chilies,roasted,peeled ,seeded and chopped(or 1 4oz can chopped medium green chilies)
- 1 tsp med-hot chili powder
- 16 oz. salsa
- 1.4 c. chopped fresh cilantro leaves
- 1-1/2 tsp ground cumin
- salt to taste
- 6 10" flour tortillas or 12 6" corn tortilllas
- 1 c. canned refried beans
- 2-4 Tbs vegetable oil for basting
- sour cream,tomatoes,guacamole(optional)

Creamy Poblano Strips

Char the poblano chiles directly over the gas flame on the stove or under the broiler until blackened on all sides
- 6 fresh poblano chiles* (or canned, peeled)
- 3 tablespoons vegetable oil
- 1 medium white onion, thinly sliced
- 2 ears corn, kernels removed
- 1/4 cup heavy cream
- 1/4 cup Mexican crema or creme fraiche or sour cream
- 1/2 cup, shredded Monterrey jack cheese
- Kosher salt and fresh ground black pepper
Slow Cooker Turkey

Place bacon in a skillet over medium-high heat, and cook until evenly brown
- 5 slices bacon
- 1 (5 1/2 pound) bone-in turkey breast, skin removed. Also may use a turkey tenderloin

- 1 medium parsnip (4 ounces), peeled and sliced 1/8-inch thick, divided
- 1 medium onion, sliced 1/8-inch thick, divided
- 1/2 tsp salt, divided
- 1/4 tsp dried thyme, divided
- 1/4 tsp ground black pepper, divided
- 3 ounces shredded Gruyere cheese (about 3/4 cup), divided
- 3 ounces shredded Parmesan (about 3/4 cup), divided
- 1/2 c. heavy cream
- 1/4 c. chicken broth
- 2 tbsp panko bread crumbs
