Thousand Island Chicken

Mix ingredients together well & pour over chicken in baking dish
- 1 whole chicken, cut up
- 1 8 oz. bottle thousand island dressing
- 1/2 jar apricot jam
- 1 pkg dry onion soup mix

1. Put a large pot of salted water on to boil for the pasta when you start this recipe
- 8 ounces long, thin pasta such as spaghetti or fettucini
- Salt
- 1/2 cup vegetable oil (grapeseed or canola)
- 3 thinly sliced cloves garlic
- 1 ounce (about 2 medium to large) dried ancho chiles, rinsed, seeded and deveined
- 1/2 pound 21-25 count raw shrimp, peeled, deveined, and tails removed, the shrimp pieces cut into thirds
- Black pepper
- Freshly grated Parmesan
- Lime or lemon juice, fresh squeezed
Spicy Sliders

Preheat grill. In bowl, mix beef, chili powder, garlic powder, cumin and salt
- 1 1/4 pounds ground beef
- 1 tablespoon chili powder
- 2 teaspoons garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 1/2 cups lightly packed cilantro leaves
- 1/2 cup mayonnaise
- 1 jalapeno, seeded
- 1 tablespoon fresh lemon juice
- 8 slider rolls, toasted

Acorn Squash with Jalapeno-Lime Butter

Preheat oven to 400F. Line a sheet pan with parchment paper or foil for easier cleanup, if you like
- 2 small acorn squash (about 1 1/2 pounds each), cut into halves lengthwise, seeds removed
- 3/4 teaspoon salt, divided
- 4 tablespoons unsalted butter, softened
- 1 garlic clove, minced
- 1 to 2 tablespoon seeded and finely chopped jalapeno
- Finely grated rind of 1 lime
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
Cheesy Cream Corn with Smoky Bacon

- 2 cups quartered small red potatoes
- 1/2 cup water

- 6 slices fully cooked bacon, cut into bite-size pieces
