Perfect Italian Chicken Cutlet

If breast have tenderloins, remove and trim of all cartilage
- 4 boneless chicken breast halves (approximately 2 pounds)
- 2 ‑1/4 cups Buddy's Breadcrumbs (see recipe)
- 1/4 cups grated parmesan cheese
- 1 ‑1/2 cups all purpose flour
- 3 large eggs, beaten with a fork
- Salt and pepper
- 1/2 cup olive oil for frying (approximate)
- Lemon wedges for serving
Onion-Braised Beef Brisket - America's Test Kitchen

This recipe requires a few hours of unattended cooking
- 1 beef brisket, 4 to 5 pounds, flat cut preferred
- Table salt and ground black pepper
- Vegetable oil
- 3 large onions (about 2 1/2 pounds), halved and sliced 1/2 inch thick
- 1 tablespoon brown sugar
- 3 medium cloves garlic, minced or pressed through garlic press (about 1 tablespoon)
- 1 tablespoon tomato paste

- 1 cup low-sodium chicken broth
- 1 cup dry red wine
- 3 bay leaves

- 1-2 tbsp olive oil
- 8 oz. pancetta, diced
- 3 cups onion (3 onions)
- 1 1/2 cups diced carrots (2 carrots)
- 1 1/2 cups diced celery (3-4 stalks)
- 2 tbsp minced garlic
- 2 tsp salt
- 1 teaspoon ground black pepper
- 3-4 bay leaves
- 1 tsp dried thyme
- 1/2 tsp dried oregano
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 2 lb. ground beef or veal
- 1 lb. pork sausage, removed from the casings, or ground pork
- 4 tbsp tomato paste
- 2 cup red wine
- 2 (28 oz.) cans crushed tomatoes and their juice
- 1 (28 oz) can tomato sauce
- 2 cup beef or chicken broth
- 4 tsp sugar
- 1/2 cup heavy cream
- 4 tbsp unsalted butter
Pastitsio - Baked Pasta with Meat and Bechamel Topping

This recipe will yield about 24 servings depending upon the size of your pieces
- For the bechamel sauce:
- 1/2 1/2 1/2 cup olive oil
- 2 2 2 lbs. ground beef (or ground lamb, or a mixture of both)
- 1 1 1 large yellow onion, chopped
- 1 1 1 cup dry white wine
- 1 14 1 14 1 14 oz. can tomato puree or sauce
- 3 3 3 tbsp. chopped fresh parsley
- 1/2 1/2 1/2 tsp. ground allspice
- 1 1 1 tsp. ground cinnamon
- 1 1/2 1 1/2 1/2 cups grated Parmesan cheese (or Kefalotyri if available)
- to and freshly ground black pepper to taste
