- Chicken Tikka
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1 tsp table salt
- 2 lbs boneless, skinless chicken breasts , trimmed of fat
- 1 cup plain whole-milk yogurt (see note above)
- 2 tbsp vegetable oil
- 2 medium garlic cloves , minced or pressed through a garlic press (about 2 teaspoons)
- 1 tbsp grated fresh ginger
- Masala Sauce
- 3 tbsp vegetable oil
- 1 medium onion , diced fine (about 1 1/4 cups)
- 2 medium garlic cloves , minced or pressed through a garlic press (about 2 teaspoons)
- 2 tsp grated fresh ginger
- 1 fresh serrano chile , ribs and seeds removed, flesh minced (see note above)
- 1 tbsp tomato paste
- 1 tbsp garam masala (see note above)
- 1 (28-ounce) can crushed tomatoes
- 2 tsp sugar
- 1/2 tsp table salt
- 2/3 cup heavy cream
- 1/4 cup chopped fresh cilantro leaves
Old-Time Beef Stew - Paula Deen

Based on a Paula Deen recipe, with modifications that worked beautifully
- 2 pounds stew beef
- 2 tablespoons olive oil
- Flour
- 1 cup water
- 1 cup red wine
- 1 cup beef stock
- 1 tablespoon Worcestershire sauce
- 2 cloves garlic, smashed
- 1 or 2 bay leaves
- 1 medium onion, sliced
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- Dash (or more) ground allspice or ground cloves
- Thyme stalks
- 3 large carrots, sliced
- 3 ribs celery, chopped
- 2 large potatoes, chopped
Indonesian Ginger Chicken

Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted
- 1 cup honey
- 3/4 cup soy sauce
- 1/4 cup minced garlic (8 to 12 cloves)
- 1/2 cup peeled and grated fresh ginger root
- 2 (3 1/2 pound) chickens, quartered, with backs removed
Chickpea Soup with Porcini Mushrooms

1.) Drain and rinse the chickpeas and put them in a soup pot, along with 2 quarts of water
- 1/2 pound dried chickpeas, rinsed and soaked overnight covered by about 4 inches of cold water
- 1/4 cup dried porcini mushrooms
- 1/2 small onion, coarsely chopped
- 1 celery stalk, coarsely chopped
- 1 clove garlic
- 1/4 cup fresh parsley
- 1 tablespoon fresh oregano leaves
- 1 tablespoon fresh rosemary
- 1.5 teaspoons coarse sea salt, divided
- 3 tablespoons olive oil, divided
- 3/4 cup canned plum tomatoes, hand-crushed
- 1 pound fresh mushrooms -- I used shiitake, portabello, and white button
- black pepper, to taste
- optional (and I highly recommend!): some fresh parmesan, very thinly sliced

- 3 Tablespoons extra virgin olive oil
- 2 ‑3 Tablespoons butter
- 1 Tablespoon white truffle oil
