COUNTRY STYLE CHICKEN KIEV

Combine first 6 ingredients
- 1/2 c. bread crumbs
- 2 tbsp. grated Parmesan cheese
- 1 tsp. basil
- 1 tsp. oregano
- 1/2 tsp. garlic salt
- 1/4 tsp. salt
- 2 whole chicken breasts, split
- 2/3 c. butter, melted
- 1/4 c. white wine or apple juice
- 1/4 c. chopped green onion
- 1/4 c. chopped parsley
Stir-Fried Asparagus with Shiitake Mushrooms

1. Combine water, soy sauce, sherry, sugar, ginger, and sesame oil in bowl
- 2 tablespoons water
- 1 tablespoon soy sauce
- 1 tablespoon dry sherry
- 2 teaspoons packed brown sugar
- 2 teaspoons grated fresh ginger
- 1 teaspoon toasted sesame oil
- 1 tablespoon vegetable oil
- 1 pound asparagus, trimmed and cut on bias into 2-inch lengths
- 4 ounces shiitake mushrooms, stemmed and sliced thin
- 2 scallions, green parts only, sliced thin on bias (optional)
Buttermilk Pancakes

1. Crack eggs into small bowl and whisk until foamy 2
- 1 1/2 c all-purpose flour
- 3 T sugar
- 2 t baking powder
- 1/2 t salt
- 1/2 t baking soda if using buttermilk
- 2 large eggs
- 1 1/2 c milk or buttermilk (see baking soda, above, if using buttermilk)
- 3 T melted butter or margarine, or 3 T vegetable or canola oil
- 1/2 t vanilla
- 1/2 c add-ins: blueberries, minced apple, chopped nuts, diced banana
- Toppings: Butter, maple syrup, honey, jam, fresh fruit, lemon.

- 8 tablespoons extra-virgin olive oil
- 3 shallots, thinly sliced
- 1 large head radicchio (about 12 ounces), coarsely chopped
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 1/3 cup fish broth
- Salt and freshly ground black pepper
- 6 (5 to 6-ounce) whitefish fillets, such as tilapia
- All-purpose flour, for dredging
- Lemon Vinaigrette
- 1/4 cup fresh lemon juice
- 1/4 cup lightly packed fresh Italian parsley leaves
- 2 cloves garlic
- 2 teaspoons finely grated lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup extra-virgin olive oil

In a large pot heated at medium heat give a swig of EVOO
- ~ Extra Virgin Olive Oil
- ~ 2 Onions
- ~ 1 Green Pepper
- ~ 6 or 7 Cloves of Garlic
- ~ 1 lb. Ground Beef
- ~ 2 tsp Salt and Pepper
- ~ 1 tbsSugar
- ~ 29 ounce can of Red Kidney Beans
- ~ 24 ounce can of Tomato Sauce
- ~ 3 tbs of Brown Sugar
- ~ 1 ounce Dark Chocolate
- ~ 1 tbs Basil, Oregano and Parsley
- ~ 2 tbs of Paprika
- ~ 12 ounces of Beer
- ~ 1 tbs of Chili Powder
- ~ 1 tbs of Cayenne Pepper
- ~ 1 tbs of Hot Sauce
Angel Hair Pasta with Shrimp and Lemon Cream Sauce

- 3/4 cup heavy whipping cream
- 1/4 cup chicken stock
- 3 Tbsp lemon juice
- 3/4 pound angel hair pasta (also called capellini)
- Salt and black pepper
- 1 pound raw medium shrimp, peeled and deveined*
- 1/2 cup (loosely packed) chopped parsley
- 1/4 cup (loosely packed) chopped chives
- Zest of a lemon
- 1/2 cup freshly grated parmesan cheese
Chinese Broccoli With Oyster Sauce

Oyster sauce nicely complements the slightly bittersweet taste of Chinese broccoli (gai lan)
- Sauce:
- 10 ounces Chinese broccoli (gai lan)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 slice ginger (about 1/2-inch thick)
- 3 tablespoons chicken broth or water
- 2 tablespoons oyster sauce
- 1 tablespoon Chinese rice wine or dry sherry
- 1/2 teaspoon sugar
Fart Soup

Brown the celery and onion in some olive oil
- 2 stalk celery, chopped
- 1 large onion, roughly chopped
- Olive oil
- 6 cloves garlic, minced
- 2 heaping tbsp tomato paste
- 1 tbsp salt
- 2 cups chicken stock
- 2 cups beef stock
- 2 cups water
- 28 oz. Aurora diced tomatoes
- 2 cups mixed beans

Place an oven shelf in an upper position in oven, and preheat oven to 350 degrees F (175 degrees C)
- Cooking spray (preferably with flour)
- 3 1/2 cups unbleached all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 cup canola oil
- 1 cup honey
- 1 1/2 cups white sugar
- 1/2 cup brown sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee (decaf is fine)
- 1/2 cup orange juice

1. Season chicken lightly with salt and pepper
- 6 boneless, skinless chicken cutlets (about 1 1/4 pounds total)
- Kosher salt
- Freshly ground black pepper
- 2 large egg whites
- 2 tablespoons cornstarch
- 1 tablespoon chopped parsley
- 2 teaspoons minced garlic
- Dijon mustard
- 1 1/2 ounces thinly sliced provolone cheese (1 1/2 slices)
- 1 1/2 ounces thinly sliced ham (11/2 slices)
- 3 tablespoons sauerkraut, packed, more for serving
- 3/8 teaspoon caraway seeds
- 2 cups plain bread crumbs
- 2 tablespoons extra virgin olive oil, for frying.
