Slow Cooker Garlic Parmesan Chicken and Potatoes

Season chicken with basil, oregano, rosemary, salt and pepper, to taste
- 8 bone-in, skin-on chicken thighs
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried rosemary
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- 2 pounds baby red potatoes, quartered
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1 cup freshly grated Parmesan
- 2 tablespoons chopped fresh parsley leaves
Korean Tacos

Whisk all ingredients together until sugar has dissolved and mixture is smooth
- 1 pound cooked pulled pork, cooked shredded chicken
- 12 corn or flour tortillas
- 1/4 cup Quick Cucumber Pickle (below) or prepared kimchi (Korean pickled, spicy cabbage)
- For the Kogi BBQ Sauce
- 2 tablespoons Korean fermented hot pepper paste (gochujang)
- 3 tablespoons sugar
- 2 tablespoons soy sauce
- 1 teaspoon rice wine vinegar
- 2 teaspoons sesame oil

- 1 Tbsp rice wine vinegar
- 1 Tsp olive oil
- 1/2 tsp toasted sesame oil
- 1/2 soy sauce
- Dash of cayenne pepper
