SAUSAGE****Cornbread Stuffed Bell Pepper Rings

This was very good, Dan especially liked it
- 2 servings
- 1 tablespoon EVOO
- 1 large bell pepper (red, yellow, orange)
- 1 recipe Cornbread for Two
- 3 oz. ground sweet Italian sausage, browned, crumbled and well-drained (I used Johnstonville Italiano Hot Italian Sausage meat)
- 1/4 medium onion, minced (didn't bother)
- 1 small jalapeño pepper, seeded and diced (Optional, depending on heat of sausage) Didn't add this, due to hot italian sausage
- 1/2 cup canned tomatoes or salsa of choice (corn and black bean PC Salsa)
- 1/2 cup shredded mexican cheese blend

- 1/2 Medium banana, frozen
- 12 grams / 2 Tbsp. PB2 regular or chocolate

Garlic Soup with Poached Eggs Soup a l'Oeuf, Provencale

Drop garlic cloves in boiling water and boil 30 seconds
- 1 separated head of garlic, unpeeled (about 16 cloves)
- 2 quarts water (I used one)
- 2 tsp salt
- Pinch of pepper
- 2 cloves
- 1/4 tsp sage
- 1/4 tsp thyme
- 1/2 bay leaf
- 4 parsley sprigs
- 1 Tbsp olive oil
- 6 eggs (I used 4)
- Rounds of hard toasted French bread
- Grated Swiss or Parmesan cheese
- Chopped parsley for garnish
YOGURT*****Preserved Lemon and Yogurt Soup Topping - 1 Point

Combine all ingredients and refrigerate
- 3/4 cup 2% Greek yogurt
- 1 piece preserved lemon, very finely diced
- pinch malden salt
- fresh herbs of choice + spices to compliment herbs of choice, i.e. fresh cilantro with ground cumin, fresh basil with dried oregano, etc.
BEETS****Roasted Beet and Heirloom Tomato Salad with Ricotta

- 2 small roasted beets
- Tomatoes- the more variation in color and size the better (I used 2 cocktail and 10 cherry which was surely enough and bordering on too much)
- 2 tablespoons each parsley and mint leaves (no need as the jalapeno-lime dressing already has both in it)
- 1/4 cup Ricotta Salata or feta cheese, crumbled or soft Ricotta or goat, dolloped
- 2 tablespoons vinaigrette of choice (I tried jalapeno-lime, which was great) or just good quality Extra Virgin Olive Oil
- 1 cup arugula spinach blend, for base, Optional
- salt and Freshly ground pepper to taste

Use bone-in chicken breasts for this French-country dish
- 4 servings
- # 4 (6-ounce) skinned chicken breast halves
- # 2 teaspoons dried basil
- # 1/8 teaspoon salt
- # 1/8 teaspoon black pepper
- # 1 cup diced yellow bell pepper
- # 1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
- # 1 (14 1/2-ounce) can pasta-style tomatoes, undrained
PORK-Slow Cooker Sausage, Sweet Potato and Black Bean Chili

- 6 oz. ground or cooked and sliced Italian sausage or chorizo or combination
- 1 small onion, diced
- 1 clove garlic, minced
- 1/2 cup minced sweet peppers
- 1 teaspoon chili powder
- 1/3 teaspoon ground cumin
- 1 cup beef broth
- 1 can fire-roasted tomatoes
- 1 small can black beans, drained, rinsed
- 1 1/2 cups diced sweet potatoes, 3/4-inch cubes
- 1/3 cup shredded Mexican cheese blend (1.5 oz)

* Cook turkey in a large non-stick skillet over medium-high heat until browned, stirring to crumble
- 4 servings
- 8 oz. ground turkey
- 1/2 cup chopped onion
- 1/4 cup diced sweet peppers
- 1/2 cup frozen or canned corn
- 2 cloves garlic, minced
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/4 tsp. ground chipotle chile pepper or dash chipotle tabasco sauce
- 1 can canned black beans, rinsed and drained
- 1/2 can aurora tomatoes
- 1 recipe cornbread for two for each serving of two
- 1/2 tsp. chipotle tabasco sauce and 20 grams shredded light Tex-Mex cheese blend - added to each batch of cornbread
EGGPLANT****Roasted Eggplant - 4 Points

I roasted eggplant this way for a pasta dish, which turned out awful, but the eggplant itself was yummy when it cam...
- 1 or 2 small eggplant, cut into 1/2" squares (about 1 1/2 cups cubed)
- generous pinch of red pepper flakes
- 1 clove garlic, minced
- sea salt and pepper to taste
- 1 tablespoon EVOO
