- 1/4 cup leftover beets (I used 1/4 pkg. Dole multi-coloured beets in olive oil)
- 3 cups arugula
- 1/4 cup cooked quinoa
- 1 tablespoon homemade vinaigrette (I used hazelnut)
- 2 ounces (1/4 large) avocado
- 1 ounce goat cheese
- 1 tablespoon sunflower seeds
QUINOA****Mediterranean Quinoa & Garbanzo Salad

- 1 cup cooked truRoots® Organic Quinoa or sprouted Quinoa
- 1/4 cup extra virgin olive oil or flavoured olive oil
- 2 tbsp. Lemon Juice
- 2 tsp. minced garlic
- 1 tsp. dried oregano leaves
- Salt and pepper to taste
- 1 (15 oz.) can chickpeas, rinsed and drained
- 1/2 cup diced red bell peppers + jalapenos if you have them
- 1/2 cup sliced green olives (20 small stuffed olives)
- 1/2 cup diced red onion
- 1/2 cup crumbled feta cheese (45 grams)
- 2 tbsp. minced Italian parsley + other herbs of choice

- required amount of lobster tail meat (about 4 ounces total for both of us)
- 2 tbsp garlic-herb butter
- Kraft Italiano Four-Cheese blend - about 30 grams each (I used regular but I'm sure the light would be good too)
- garlic bread, lemon wedges and chopped fresh parsley to serve
HALIBUT - Oven-Baked Wood Planked Asian Halibut with Herb Salad

Preheat oven to 400ºF. Line a baking sheet with foil and place the soaked wood plank in it
- 1 tablespoon soy sauce
- 1/4 tablespoon hot Chinese mustard
- 1/2 tablespoon honey
- 1 piece halibut (about 8 - 10 ounces, skin-on)
- 1/4 cup radish (thinly shaved)
- 2 tablespoons cilantro
- 2 tablespoons scallions (thinly sliced on the bias)
- 1 tablespoon olive oil
- 1/2 lime (juiced)
- cedar planks (soaked in salted water for a minimum of 2 hours)
- kosher salt and freshly ground black pepper (to taste)

- 3/8 cup Plain, fat free Greek yogurt

SQUASH****Cheesy Squash Fondue

- 1 small Acorn Squash, about 1 lb., 6 oz. (cut in half crosswise, seeds removed)
- 2 teaspoons Becel
- 1 small Leek, finely chopped)
- 2 tablespoons (30 grams) Mascarpone
- 2 tablespoons Heavy Cream
- 2 ounces Grandpa ham, in fine dice, if on hand
- 1/4 teaspoon Freshly Grated Nutmeg
- small pinch of cayenne
- 60 grams Kraft 4 Cheese Italiano Light or grated Gruyere
- 1 tablespoon of maple syrup (for Dan)
- Salt and Freshly Ground Black Pepper to Taste
- Grilled baguette slices, to serve
VINAIGRETTE - Orange Balsamic Vinaigrette - Mediterranean Fresh

Whisk all ingredients together
- 2 tablespoons artisan-produced balsamic vinegar or condiment
- 2 tablespoons sherry vinegar
- 1/4 cup fresh orange juice
- 2 tablespoons freshly grated orange zest
- sea salt and freshly ground black pepper
- 2/3 cup mild and fruity extra-virgin olive oil
MAYONNAISE****Basic Sauce Ravigote

This was very good. I used it for the artichokes then a week or two later in salmon salad for sandwiches
- 1/4 1/4 1/4 cup mayonnaise
- 1/2 of 1/2 lemon
- 1 1 1 tbsp. prepared horseradish
- 1/2 1/2 1/2 tsp Dijon mustard
- 1/4 1/4 1/4 tsp white wine vinegar
- 2 2 2 tsp chopped fresh chives or parsley - optional
- 1-2 1-2 1-2 pinches cayenne pepper
- 1/2 1/2 1/2 tsp salt
- 1 1 1 pinch freshly ground white pepper
