SPELT****Spelt and Arugula Salad with Basil

Very good for both. Dan picked around his arugula but leave it in, I liked the texture contrast
- 1/4 cup spelt
- 2 cups water
- pinch of salt
- 1 shallot, finely minced
- 2 tsp. red-wine or basil vinegar
- 10 cherry tomatoes, halved and seeded if desired
- 2 green onions, sliced
- 6 kalamata or nicoise black olives, pitted and halved
- 1 cup arugula and spinach blend
- 1 tbsp. fresh basil, chiffonade
- 1 tbsp. extra-virgin olive oil
- salt and pepper
SALMON-West Coast Salmon Saltimbocca

Cut tops off garlic heads, exposing cloves
- 2 heads garlic
- 3 tbsp roasted garlic oil or extra-virgin olive oil
- 2 salmon fillets, (6 oz each), about 1/2 inch thick
- 1/4 lb prosciutto, thinly sliced
- 10 fresh sage leaves
- 2 slices (3/4 inch) rustic French bread, (not baguette)
- 3 tbsp butter
- 6 tbsp Sauvignon Blanc or dry white wine
- Fresh Garlic Aioli: (4 or more servings)
- 4 cloves garlic, chopped
- 1 egg
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1 pinch pepper
- 1/2 cup light-flavoured olive oil
PUY - Bean, Lentil & Kale Bake

Cook lentils in 3 cups of water for 20 to 30 minutes until soft
- 1/3 cup dried green lentils (du Puy lentils), rinsed
- 1/2 tablespoon olive oil
- 1/3 onion, chopped
- 2 cloves garlic, chopped
- 1 cup fire-roasted or other diced tomatoes
- 1 1/2 cups chopped kale (stems removed)
- 3/4 teaspoon Cajun seasoning
- pinch teaspoon salt
- 1 cup black beans, drained and rinsed
- 1/3 cup (30 grams) shredded cheddar cheese or Tex Mex or 4-cheese blend
- 4 tablespoons brown basmati rice
WATERMELON - Spicy Watermelon & Avocado Salad

In a large bowl, whisk together the juice and zest of the orange and the lime and the olive oil
- 1 cup cubed seedless watermelon (1 inch cubes)
- 1/2 jalapeno (thinly sliced)
- 1 cup baby arugula or mixed salad greens
- 2 tablespoons slivered red onion
- 5 cherry tomatoes, halved
- 2 tablespoons mint leaves (chopped, plus more for garnish)
- 1/2 avocado, diced
- 1/4 orange (zest and juice)
- 1/2 lime (zest and juice)
- 2 teaspoons good extra-virgin olive oil
- salt and freshly ground black pepper
- 1 ounce crumbled or diced feta
WINGS - Crispy Oven-Baked Asian Chicken Wings

Place chicken wings in a zip-lock back and add soy sauce and seasonings
- 6 chicken wings, separated into two pieces each, tips discarded (about 1 lb.)
- 1 tablespoon Soy or Tamari Sauce
- 1/4 tsp. salt
- freshly ground black pepper
- 1/2 tsp. powdered ginger
- small pinch cayenne Pepper
- 3 tablespoons EVOO
ASIAN****Gochujang Stir-Fry Sauce

- 1 1 1 tablespoon toasted sesame oil
- 2 2 2 teaspoons sugar
POTATO*****Potato Bisque

This is super cold - like vichysoisse but without all the added fat from whipping cream and half and half
- 6 servings
- 4 strips bacon, diced - optional - I haven't tried this and it's not included in the point count
- 1 1/2 cups chopped leeks, white and light green part only
- 1 1/2 pounds Yukon Gold Potatoes, peeled and diced
- 5 cups chicken stock
- 1 tablespoon chopped fresh thyme
- 1 cup sour cream - 5%
- salt and pepper
RUM - Mr. Howell

Add rum, lime juice, maple syrup, and Scotch to a cocktail shaker and fill 2/3 full with ice
- 1 1/2 ounces (45ml) rum
- 3/4 ounce (20ml) fresh juice from 1 large or 2 small limes
- 1/2 ounce (15ml) maple syrup
- 1/2 ounce (15ml) peaty Islay Scotch, such as Laphroaig
- Lime wheel, for garnish
