- 1 pound chicken wings (5 pieces each)
- 2 cloves garlic, crushed
- Zest of 1 lemon, peeled or finely grated
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1/2 tablespoon Dijon mustard
- 1 small sprig rosemary
- 1/4 teaspoon coarse salt
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon fresh ground black pepper
POTATO*****Twice Baked Potatoes Stuffed with Mushrooms and Spinach

12 Points with Mascarpone, Gruyere and Bacon
- 2 servings
- 1 medium to large baking potato
- 1 tsp. EVOO
- 2 slices bacon or garlic pepper bacon, diced
- 6 cremini mushrooms, sliced
- 1 shallot, minced
- 2 green onions, diced
- 1 clove garlic, minced
- 2 - 3 squares frozen spinach, thawed or 2 - 3 oz. fresh baby spinach
- 30 grams cream cheese or mascarpone
- 2 - 3 tbsp. greek yogurt
- 1 oz. finely diced gruyere or other hard, melting cheese
- sea salt, paprika and black pepper to taste
- fresh herbs of choice (rosemary, thyme)
- 50 grams PC Southwest Blend or shredded Kraft Light Cheddar
FISH****Grilled Haddock, Cod or Mahi with Tomatoes, Olives & Capers & Brown Rice

- 2 Servings
- 5 1/2 oz. Haddock or Cod loins from Costco
- 8 cherry tomatoes, quartered
- 1 clove of garlic, grated or thinly sliced
- 1 shallot, thinly sliced
- 1 pinch of red pepper flakes
- 1 tbsp. capers
- 8 nicoise olives, pitted and quartered
- 2 tbsp. fresh herbs of choice (parsley, sage, basil)
- 2 tbsp. EVOO
- grated zest and juice of 1 lemon
- maldon salt and freshly ground pepper, to taste
- 6 tbsp. Lundberg Wild Blend or Jubilee Blend or brown basmati
- (for Mexican version, replace lemon with lime, black olives with green, parsley with cilantro, add a thinly sliced jalapeno and a pinch of cumin seeds and leave out capers)
GREEN BEANS****Green Beans with Almonds and Parsley (Actifry)

- 1/2 ActiFry Spoon olive oil
- 1/4 tsp finely grated lemon zest
- 1 ActiFry Spoon fresh lemon juice
- 1/4 cup chopped fresh parsley leaves
- Salt and freshly ground
- Black pepper, to taste
YOGURT*****Cucumber & Fennel Raita

- 1 cup greek yogurt
- 1/2 cup finely diced cucumber
- 1/2 cup finely diced fennel
- 1 tsp. minced fresh basil or 1 tsp. dried basil
- 1 tbsp. fresh dill or 1 tsp. dried
- 1 tbsp. fresh mint, finely sliced or 1 tsp. dried
- sea salt and freshly ground pepper

- 100 grams Spanish Chorizo, diced
- 1/2 medium onion, diced
- 1 celery stalks, diced
- 1 medium carrot, diced
- 3 cloves garlic, sliced (reserve half for later in recipe)
- Kosher salt
- A pinch of crushed red pepper flakes (optional)
- 1/3 cup brown lentils, sorted and rinsed
- 1 bay leaf
- 1 can fire-roasted tomatoes
- 2 cups water or chicken broth
- Freshly ground black pepper
- 2 cups shredded or thinly ribboned Swiss chard leaves or kale
- Grated Pecorino Romano cheese
CHICKEN****Olive Garden Chicken Gnocchi Soup

- 1 tablespoon extra-virgin olive oil
- 1/4 cup (1/2 stick) butter
- 1/4 cup flour
- 1/2 cup finely diced celery
- 1 cup finely diced onion
- 1 leek, finely sliced, if on hand
- 2 garlic cloves, minced
- 2 cups milk
- 2 cups 5% cream
- 1 (12-16 ounce) package gnocchi (most recently I used the mini gnocchi, which is perfect)
- 1 cup finely diced carrots
- 1 cup diced cooked chicken breast
- 3 cups chicken broth
- 1 package fresh baby spinach
- 1/2 teaspoon salt, plus more if needed
- pinch of hot pepper flakes (my addition)
- 1/2 teaspoon dried thyme or 2 teaspoons fresh
- 1/2 teaspoon dried parsley or 2 tablespoons fresh
- 1/4 teaspoon grated nutmeg
- shredded fresh basil, for me
- freshly grated parmigiano reggiano, to serve - not needed
EGGPLANT****Eggplant with Vinegar and Herbs

I liked this as a side but it's a bit on the sweet side - reduce sugar by half
- 4 servings
- Small eggplant to equal one pound
- salt & pepper, to taste
- 1/4 cup EVOO
- 1/4 cup red wine vinegar
- 2 tablespoons sugar
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh mint

- 1/2 tsp ground cumin
- 1/2 tsp salt

- 2 cans fire-roasted tomatoes
- 1 cup sodium-reduced chicken broth
- 1/4 cup almond butter or cashew butter
- 1 lb shredded, poached chicken breast, divided
- 1 cup 2% Greek yogurt, divided
- 2 tbsp chopped fresh cilantro, if available, divided
