BEEF - Asian Crispy Beef with Salad & Rice Noodles

Lightly toast the peanuts in a dry frying pan, then crush in a pestle and mortar and set aside
- 1 (1/2 oz.) tablespoon unsalted peanuts
- 2 cloves of garlic
- 1 " piece of ginger
- 1 tablespoon sesame oil
- 2 whole star anise
- 100 grams lean beef mince (it called for 200 grams)
- 1/2 teaspoon runny honey
- 1/2 teaspoon fish sauce
- 1/2 teaspoon low-salt soy sauce
- 1 lime
- 75 grams PC rice vermicelli or dry Udon noodles (it called for 150 grams of brown rice noodles)
- 2 spring onions
- 1 fresh red chili
- fresh mixed salad vegetables, such as lettuce (he used butter lettuce - I think arugula/spinach blend would work), shaved carrot, radishes, cress, spinach
- 4 sprigs of fresh coriander

- 2 tablespoons Tapenade Vinaigrette
- 1/2 oz. shaved Parmigiano Reggiano or Pecorino Romano

- 1/2 cup strongly brewed coffee, cooled

- 1 garlic clove, minced
- 1 ⁄4 cup extra-virgin olive oil
- 1 ⁄4 cup fat-free chicken broth (use the stock, if available)

- 2 clementines or Mandarin oranges, separated into segments
- 1/2 medium avocado
- 1 teaspoon toasted sesame seeds
WILD*****Barley & Wild Rice Pilaf

Very good for both although this is really three servings, not two
- 1 tbsp. EVOO
- 1 shallot, finely minced
- 3 tbsp. wild rice
- 3 tbsp. pot barley
- 1 cup chicken broth
- 2 tbsp. toasted pine nuts
- 2 tsp minced fresh thyme or other fresh herbs, optional
- 1/4 cup pomegranate seeds - optional - I didn't add these the first time because I didn't have them and I'm not really sure they'd go so well with it.
- grated lemon zest and chopped fresh parsley - optional
