  • 2 packages (10 ounces each) frozen corn kernels, thawed (567 grams total)
  • 1/2 cup 2% greek yogurt
  • 1/2 cup chicken broth
  • 2 1/2 tablespoons fresh lime juice
  • 1/2 teaspoon ground coriander
  • Pinch cayenne pepper
  • 6 oz. cooked frozen shrimp, thawed, roughly chopped, reserving 2 whole shrimp for garnish (bet crab would work too)
  • Coarse salt and ground pepper
  • 5 grape tomatoes, halved
  • 1/2 small avocado, halved, pitted, peeled, and diced
