Marinate Mahi Mahi in a blend of sake, miso, mirin and more

- 1tablespoon1 tablespoon soy sauce
- 1/2tablespoon1/2 tablespoon brown sugar
- PinchPinch hot pepper flakes
- 1teaspoon1 teaspoon each grated garlic and ginger
- Grated zest of one lime
- 1(6 ounce)1 (6 ounce) Mahi Mahi filet
- 1tablespoon1 tablespoon chopped scallion
- 1teaspoon1 teaspoon toasted sesame seeds
- Juice of 1 lime

Lightly brush bread with olive oil and toast to desired level of doneness
- 1 slice country or sandwich bread, toasted
- 1 teaspoon extra-virgin olive oil
- 1/2 medium pitted and peeled avocado
- 1 teaspoon soy sauce, plus more to taste
- 4 to 5 thin slices seedless cucumber, or enough to cover surface of bread
- Thinly sliced scallion, to garnish
- Shichimi togarashi, to taste

- 4 slices thick-cut bacon, diced (I used garlic-pepper)
- 1/2 large onion, diced
- 1 clove garlic, minced
- 1/4 cup 2% Greek yogurt
- 1/4 cup ricotta or cream cheese
- 2 - 4 tablespoons milk, if needed
- 1 - 2 teaspoons drained horseradish, to taste (I used 1 heaping teaspoon, it could take two)
- 2 tablespoons minced fresh parsley
- salt and pepper, to taste
- 2 ounces shredded cheddar or smoked cheddar cheese, or combination
- 30 grams grated parmigiano reggiano
