- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper (substitute all or part Aleppo pepper)
- 90 grams coarsely grated extra-sharp Cheddar or Tex-Mex Blend
- 25 grams grated Parmigiano-Reggiano
- 3/4 stick cold unsalted butter, frozen and grated
- 1 1/4 cups well-shaken buttermilk
- 2 tablespoons Becel, melted
- 1 teaspoon (or to taste) Old Bay Seasoning
