QUINOA****Crunchy Thai Quinoa Salad

- For the dressing:
- 2 cups cooked quinoa (6 tablespoons raw)
- 2 cups cabbage or carrot slaw (I used a bag of PC carrot slaw)
- 1/2 sweet bell pepper, sliced
- 1 jalapeno pepper, diced or sliced
- 1/4 red onion, sliced
- 2 tablespoons each chopped fresh cilantro, shredded fresh mint and basil
- 2 sliced green onions
- 1/4 cup cashew halves or peanuts (2 oz.)
- 1/2 cup edamame or garbanzos (optional) (I didn't use these the first time as I had about 20 spears of asparagus that I wanted to use up so I blanched and added them instead)
- 4 tablespoons peanut butter or almond butter
- 1 teaspoon freshly grated ginger
- 2 tablespoons soy sauce
- 1/2 tablespoon honey
- 1/2 tablespoon red wine vinegar
- zest and juice of 1 lime
- 1 teaspoon sesame oil
- 2 - 3 tablespoons olive oil
- pinch of cayenne pepper or drizzle of sambal oelek
- Water to thin, if necessary
- 1/4 avocado per portion, optional
SOUP - Chicken Pho - Cuisine Adventures (Costco)

- Microwave
- 1 . Remove and discard film that covers the bowl.
- 2 . Add 4 oz (1/2cup) of water or broth.
- 3 . Heat on HIGH for 3 minutes. Stir, heat for 1 to 1 1/2 minutes longer and stir again.
- 4 . Let sit for 1 minute or more before serving.
- Add hot chili oil to taste

- 2 spray(s) cooking spray
- 20 oz butternut squash, fresh, peeled and cubed*
- 1/8 tsp table salt, for cooking pasta
- 12 oz uncooked whole-wheat pasta, penne
- 1 1/4 cup(s) fat-free skim milk
- 2 Tbsp white all-purpose flour
- 2 tsp minced garlic
- 1/2 tsp table salt
- 1/4 tsp black pepper, freshly ground, or to taste
- 1 Tbsp thyme, fresh, chopped, divided
- 1/2 cup(s) part-skim ricotta cheese
- 1/3 cup(s) grated Parmesan cheese, Parmigiano-Reggiano recommended
- 1/4 cup(s) chopped walnuts, toasted
HAM****Ham and Asparagus Roll-Ups

Spread ham with cheese and distribute lettuce over
- 1 slice Cappola Rosemary Ham
- 1 Tablespoon (15 grams) Philly whipped cream cheese or spreadable goat cheese
- few lettuce leaves
- 1 spear of asparagus, steamed or broiled
- salt and pepper to taste

- 50 grams smoked tofu, thinly sliced, optional
- leftover roasted baby bok choy or broccoli, if on hand
- pinch crushed red pepper flakes or 2 thinly sliced fresh Thai chilies
- handful baby spinach
- SAUCE*
- 1/2 teaspoon sesame oil
- 2 teaspoons soy sauce
- 1/2 tsp. rice vinegar
- 1/4 tsp. Sriracha
- 1 tablespoon smooth or crunchy peanut butter
- 1 teaspoon honey
- 1/2 lime, zest and juice
- TO SERVE*
- 1 green onion, thinly sliced
- 1 teaspoon sesame seeds
- Fresh cilantro, basil, mint and lime wedges for garnish
