SQUASH - Maple-Roasted Winter Squash with Bacon and Sage

Preheat the oven to 400 degrees
- 1 medium butternut squash, acorn or ambercup squash (or combination - recipe originally called for one of each)
- 1/2 head of garlic, separated but not peeled
- 1 1/2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly ground pepper
- (judicious) pinch of cayenne or chili powder
- 4 slices applewood-smoked bacon
- 8 whole fresh sage leaves
- 1/4 cup (35 grams) roasted salted pumpkin seeds or squash seeds (if you're feeling ambitious)
CAULIFLOWER****Roasted Cauliflower Salad with Capers and Olives

I liked this quite a bit. Dan, not so much
- 1 small head cauliflower, cut into bite size florets
- Extra-virgin olive oil
- 2 - 3 cloves garlic, thinly sliced
- Pinch of red pepper flakes
- freshly ground pepper and Maldon salt to taste
- 1/4 small onion, thinly sliced
- 2 tbsp. capers, rinsed and drained
- 12 nicoise olives, halved
- 2 - 3 tbsp. red wine vinaigrette or preserved lemon vinaigrette
- handful of salad greens
THIGHS****Spicy Peanut Chicken

29/10/14 - This is a decent recipe with a make-ahead component and worth a redo, with the noted tweaks
- 1/4 cup smooth peanut butter - I would have liked a more "Peanutty" flavour ... try the powdered PB maybe?
- 1/4 cup water
- 1 teaspoon toasted sesame oil
- 2 tablespoons soy sauce
- 2 teaspoons sambal oelek -I used Thai Kitchen red chili paste, which wasn't enough heat ... try sambal or Sriracha
- 2 teaspoons rice vinegar
- 4 to 6 skinless chicken thighs
BEER-Brandy Apple Beer - Clinton Kelly

Combine the Cider Syrup and the Apple Brandy in a shaker filled with ice
- Apple Cider Syrup:
- 1/2 ounce Apple Cider Syrup
- 1 ounce Apple Brandy
- 6 ounces Wheat Beer or Pumpkin Ale
- Apple Slice (To Garnish)
- 2 cups Apple Cider
- 1/2 teaspoon Freshly Grated Nutmeg
Thai Cucumber Salad

In a small bowl, combine the sugar, hot pepper, salt, black & red pepper and garlic
- 2 teaspoons sugar (or Splenda)
- 1/2 - 1 teaspoon crushed hot red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/8 - 1/4 teaspoon Cayenne pepper
- 1 clove garlic, minced
- 2 large cucumbers, peeled
- 1 1/2 teaspoons toasted Sesame Oil
- 1/2 red onion, sliced into thin half moons
- 1 tablespoon fresh lime juice
- 1/4 cup peanuts, roasted and chopped fine
SALAMI****Pizza Margherita with Salami

- 1 Rustic Crust Organic Old World Flat Bread Pizza with sauce (Costco)
- 1 teaspoon olive oil
- 90 grams Fior' di Latte, diced (don't go over - I did and it dripped over the sides of the pizza in the oven and made a huge mess)
- 45 grams salami, diced or thinly sliced (I used Salamini original and Calabrese, mixed, thinly sliced)
- 2 tablespoons grated fresh parmigiano reggiano
- fresh basil leaves (for my portion only)
- pinch of hot pepper flakes
EGG*****Naan Egg Sandwich

- 2 PC Naan rounds
- 1 slice PC old cheddar
- 1 egg
- handful of arugula or arugula/spinach mix
- 2 teaspoons EVOO
- small amount of PC Pepperoncini Picante (about 1/4 teaspoon)
- 1/4 lime, juiced
- salt and pepper to taste

- 1/4 pound unsalted butter (room temperature)
- 1 cup light or dark brown sugar (lightly packed)
- 1 extra-large egg (room temperature)
- 1/4 cup unsulphured molasses
- 2 cups all-purpose flour (plus 2 tablespoons)
- 2 teaspoons baking soda
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground cloves

- 1/2 cup golden raisins
- 1/3 cup (2 oz.) crystallized ginger, minced

- GREMOLATA (four servings):
- 1/2 head cauliflower, rinsed
- 1 Tbsp olive oil
- Kosher salt and ground black pepper
- 20 grams parmesan, grated in the mini food processor
- zest of 1 lemon
- 2 - 3 tablespoons parsley, finely chopped
- 1 clove garlic, minced
- 2 tablespoons pine nuts or walnuts, toasted and roughly chopped
